Mmmm...Ice Cream [More:]I had a hankering to make dulce de leche ice cream, but found that none of my local stores carried it (including import stores). Here's how I faked it:

Ingredients:
1 8 oz Can of sweetened condensed milk
2 large eggs (as fresh as possible)
1 pint of heavy cream
1 t vanilla
Two days before, put the UNOPENED can of condensed milk into a pot of boiling water. Ensure that the can is well-covered with water. Reduce to a simmer, cover and simmer for 3.5 - 4 hours. Put the can in the fridge overnight.
One day before, beat the eggs until light, add in the contents of the can (it will have been magically transformed into caramel). Beat until smooth. I used an electric mixer. You will be unhappy otherwise. Mix in the cream and vanilla. Cover and put in the coldest part of your fridge overnight.
Mix goes in your ice cream maker. Churn and enjoy.
Magic! Slow and detailed, but magic none-the-less.

Oooohh sounds so good. And I never knew you could do that to a can of milk. Seems like it might explode or something but apparently not.

Did you happen to taste the milk/caramel before you mixed it in? What was it like?

It's gorgeous, Ardiril. I made it once to use in a bannoffee pie, but now in England you can buy it already cooked up in the tin.

Kangaroo, sometimes the can does explode, so be verrrrry careful doing this.

The can should never explode if it is always underwater. Trouble happens, I understand, when the water cooks off exposing the can.

I did taste it before mixing it in. It's caramel in color, texture, and taste. Plain and simple.
