Can we talk about rice pudding? [More:]My current very simple go-to recipe is as follows:

4 + 1/4 c milk
1 c (nonconverted) white rice

Heat the milk in the microwave, put milk and rice in a covered glass casserole in a 250 degree oven for 75 minutes. (Stir once around the 60 minute mark).

Beat together
2 eggs
1/2c sugar
1/4c brown sugar
1tsp vanilla extract

Spoon some of the cooked rice mixture into the eggs, then fold it all back in to the rice. Season with cinnamon and nutmeg; let it stand for just a few minutes and serve warm.

One of the annoyances in my life is that, while this is pretty good (and it's excellent with a spoonful of apricot jam mixed into your bowl), it's still not as good as stupid store bought stuff.

So maybe you'll share some rice pudding recipes, too, so that I can hone my art.
There were a bunch in this askme thread. I love rice pudding but the milk always boils over when I make it and it's too hard to clean up. :(

The few times I've tried rice pudding, I liked it. But everyone I know seems to recoil in horror at the very mention of it.

I was once - this is literally true - nearly shot due to a misunderstanding involving rice pudding. You'll have to imagine the story behind that, though.

I have never had rice pudding in my life. I don't think it's ever even been offered to me.

I love rice pudding. When I was a kid, it always came out of a tin. But I remember seeing a friend's mother take a dish of it out of the oven, and it had a baked golden skin on it that she called "James' Garter", which was delicious. I've never found any other reference to that, but it might well be something going back to the days of King James I or II, one of those weird obscure English references.

My mum didn't cook, so that was the only time I had proper rice pudding, until I was an adult and learned to make it for myself.

Baked Rice Pudding

Ingredients:

1½ oz short grain pudding rice

1oz unrefined caster sugar

1 pt milk

Knob of butter

1 whole nutmeg

Method:

1. Heat the oven to 150ºC/300ºF/Gas 2

2. Put the rice in a greased ovenproof dish with the sugar. Pour in the milk with shavings of butter and cover with a good layer of freshly grated nutmeg. Bake in the bottom of the oven for 2 hours; stirring after 30 minutes.

3. Serve immediately in warmed bowls with a pouring of double cream.

Variations:

Add raisins, or 1 tsp of powdered cinnamon, or 2oz finely chopped dried apricots to the pudding before baking.

mmm rice pudding. Although I always think of this place in NYC whose owner was charged with money laundering a few years back. It's still open, though. And has yummy rice pudding.

I have heard good things about Rice to Riches but everything about their menu is so cutesy-precious I want to punch a rice farmer.

My grandmother made a great rice pudding for breakfast when us kids stayed overnight, but all her recipes died with her. No rice pudding I have tried since compares, and most I would place in the EEEEEEEWWWWWWWWW category.

I know she baked it in a skillet and I am pretty sure she precooked the rice in butter. Hers always had a nice crust top and bottom, and she also used bacon grease leftover from my grandfather's breakfast. He was a dairy farmer and so they were always up before us kids.

I'm a fan of the Indian version, kheer. It's basically rice boiled with milk and sugar, then flavored with cardamom (and sometimes saffron). Very easy to make. I don't think I've ever had the more custardy Western version, and for some reason I don't think I'd like it. I don't like eggy things.

I don't love rice or rice pudding, but I just made some very tasty bread pudding. It's very comforting food.

Knob of butter

Sorry to be the uncultured Yank in the thread, but what's a "knob" of butter? I'd very much like to properly incorporate this terminology into my daily lexicon.

A knob is a medium size chunk, like a tablespoon or so. (I'm a Yank living in England and have incorporated this and lots of other Limey terminology into my daily lexicon.)

LOL, a knob of butter is about the amount of soft-ish butter you can get on the end of a butter knife in one scoop, about half a tablespoon.

Heh, knob of butter, a bride's worst nightmare.

This is true for me too. I think my sister may have tried to write it down while watching her, I'll have to check. Her Bread pudding was pretty awesome too, IIRC.

Reading the Indian (subcontinent) version of rice pudding reminded me that it's been a long time since I had (American aboriginal) Indian pudding. want.

My brother-in-law (who is generally awesome) makes a delicious rice pudding. Alas, he's not handy at the moment to ask about it. Smitten Kitchen has a rice pudding on the front page right now, though.
