Quick, be my mom for a minute: How long should I cook this steak?[More:]


It's about one pound, an inch or less thick. I prefer medium rare. I'll be using my gas oven's broiler.

I am still learning these things and never remember to write them down when someone tells me...
about 5 minutes per side.

I don't time it. I just broil it till it looks right, turn it over and repeat.
I cut into the middle to check if it's done enough.

I tend to do five minutes on the first side, four on the second. But it also kind of depends on your broiler.

Strangely yes! I know this but not how to get to the point where I should start checking.

Although it's all cooked and eaten now, I'll add my two penn'orth.

It's really important to let steak rest for a couple of minutes before serving it, to let the juices soak back into it. If you serve it immediately, you cut it and all the juices escape. So when it's cooked as you want it, put a pat of butter on top, cover it with foil and leave it for a couple of minutes to let all those lovely tenderising juices to reabsorb into the meat.

Place steak on grill. Start timer. When you see juices cooking out of the top of the steak, flip it. Check timer. Cook for one or two minutes less than you just did. Remove from heat, let rest three minutes. Nom.

How was it? I came late to the thread, but I would have said that 5 minutes a side was too much, but I like my steak rare. I would have said four minutes, then flip and cook it 2-3 minutes on the remaining side. Remove from heat, cover loosely with foil and let rest 2-3 minutes.

It was very good! I actually did exactly what you would have done; four minutes and then three minutes, based on how it looked/felt.

10 to 15 minutes a side sounds good to me.
