Quick soup hope me?! Eep! I'm making a creamy chicken broth, mushroom and wild rice soup. The recipe calls for white wine, but I don't have any, and don't feel like going out to get any.

Use beer instead of wine, or just forget the alcohol? (I also don't have brandy, or anything like that.)

I guess the question is, is it a little bit of wine to deglaze the pan, for example, or is it a lot of wine that's supposed to make up the majority of the liquid part of the soup?

If it's a little bit, I'd use something acidic, like lemon juice or white wine vinegar.

If it's a lot, I'd use broth or water, and maybe still add a touch of lemon juice.

I kinda like the idea of TWO CUPS of lemon juice, but I do recognize that it's a bad move. Luckily calmer heads have prevailed. :-)

oh well... you know what? I got out of my PJs, schlepped on some jeans and a sweatshirt and went out and got some wine. The dog was happy for the walk, and I knew I was going to be sorry about the soup if I didn't add the wine.

Plus, now I get to have a glass of wine.

So Specklet, darling, just bring the empty plate!
