Hmmm!I just recently caught up on my Splendid Table podcasts, and there was some discussion of a French cheese-potato dish called L'Aligot Is that what this is? Or is this more of a gratin? and yes, recipe pleez!
I'm so glad they turned out well! I made them for Thanksgiving, so I guess TPS liked them well enough to introduce her family to them :)
Be warned, they are basically just a big serving of fat. Here's the email I sent TPS:
OK, so this is for the amount I made at Thanksgiving. It's nominally for 8-10 people, but hey, there were 6 of us and we finished 'em.
Cheesy Taters (hard or softcore)
Pre-heat oven to 400F
2lb potatoes, peeled and washed (yukon gold are best)
2 cups half and half
2 cups whipping cream
3 cloves garlic, smashed (I used 5)
3/4 tsp salt
1/2 tsp white pepper
1 tbsp butter
3/4 lb gruyere cheese, grated
Combine the first 6 ingredients in a saucepan and heat to boiling, stirring constantly. Stir for a couple of minutes to thicken it up. Spoon into a butter shallow baking dish and sprinkle cheese on top. Back at 400F for 45 minutes. Reduce heat to 350 for 30 minutes. Probably pay to cover it for the first 45 minutes so it doesn't get too brown like it did for Thanksgiving.
I must be dreaming that brina is dreaming of impossibly fabulous magical food crack. Like the fairy food that once you eat a single bite, a single crumb, you can never leave Faerie?
If someone doesn't post this recipe I can't be held accountable for what the angry villagers might do.
You know those cheesy potatoes, TPS? Have you thought about adding a crust of crushed Doritos and then sprinkling extra cheese on top before they go into the oven?
Here is gaspode's recipe (I hope you don't mind me posting it!):
This is (slightly) adapted from an Alison Holst recipe. Recipe is for 12 medium sized muffins, but I make mini ones in a 24 pan tray. Can cook for a slightly shorter time if you're making mini ones. Also cook for slightly shorter time if you have a fan bake oven.
(note: i translated some of the measurements into American :) )
Preheat oven to 390F
3/4 stick butter
1 egg
1 cup milk
1 avocado, cubed into small pieces
~ 1 Tbsp lemon juice, sprinkled over avocado to stop it going brown in the oven
Sieve the first four (dry) ingredients into a large bowl. Add cayenne, grated cheese and chopped scallions, stir to combine.
Chop bacon finely and fry until crisp. Save drippings.
Melt butter, add egg, milk and bacon drippings. Whisk to combine. Add avocado and bacon, stir.
Fold wet and dry mixtures together. V. important to only stir enough to dampen flour. I generally do about 8 folds total.
Spray 12 medium muffin pans (or 24 small, which is what I use) with cooking spray. Bake for about 10 minutes or until the muffins spring back when pressed lightly in center.
Yay!!! Thanks amro & 'pode! Now I really, really have to acquire a muffin tin or two (not a "Greek" thing at all, and so far I haven't found them here) because this sounds too delish. Must have.
