I need your best (easy) banana nut bread recipe! Go!
Ingredients:
- 125g butter (room-temp)
- 250g caster sugar
- 4 very, very ripe bananas (they should be almost all black)
- 1 cup broken walnut pieces
- 2 eggs
- 1 teaspoon vanilla
- 100g dark chocolate
- 250g flour
- 2 teaspoons baking powder
To cook:
- Cream the butter and sugar together. Add bananas, eggs, vanilla and mix well.
- Break the chocolate into small chunks and toss in, along with the nuts.
- Mix flour and baking powder together, then add. Don't over mix!
- Pour into a 19x11cm loaf pan and bake at 180°C for about an hour and fifteen minutes.
- Let cool in the pan, then tip out.
Serve warm, maybe with vanilla ice cream. Sprinkle with rum while still warm?
This was George's recipe (He was a really good baker)
* 1/2 cup Crisco
* 1 cup sugar
* 2 eggs, lightly beaten
* 1 1/4 cup banana pulp
* 1/2 cup walnuts or pecans, chopped
* 2 cups all-purpose flour
* 1 tsp baking soda
* 1/4 tsp salt (do not leave this out!)
* 1/2 tsp good vanilla extract
Preheat oven to 350 Degrees
Mix ingredients in the order given, beating until it's a smooth-ish batter (with some lumps where the nuts are) and pour into a greased loaf pan.
