What's for dinner? [More:]
or whatever meals next up for you.

Its sunny and hot here in the Seattle area, which means one thing: Grilling! I picked up a nice little tail of the first of the year Copper River Salmon, which I'm grilling simply brushed with olive oil, crushed garlic and right off the bush Rosemary. This will be served over brown rice with grilled asparagus and a nice crusty bread. I've got pale ale for refreshments.

Now to work up an appetite with some (rather put off) lawn work.
I'm thinking about some pepperoni chicken and noodles or maybe some of the garlic chicken and roasted potatoes I made last night. (I'm kinda iffy on the garlic chicken because I think it might've made me ill.)

I am nomming left over claypot rice for breakfast. It has chinese sausage, fried tofu, shiitake mushrooms and lotus root through it and pork-floss on top. Addictive.

kodama, I am envious!

Here, in the midst of a weekend cooking bonanza meant to set me up for lunches and dinners this week. Made sourdough in the bread machine yesterday - great success! Today, made a homemade enchilada sauce (OMG it smells like Texas in here, in a good way) - it should be enough for two meals, so I'll freeze half - and poaching chicken breasts, all of which will become enchiladas Tuesday night. And I just made pie dough and popped it in the fridge to rest - that will become tonight's dinner, a quiche of caramelized onions, ham that's been hanging in the freezer since Easter, and cheddar cheese with salad. The quiche should give me lunches Mon and Tues as well, the enchiladas will be Tuesday's dinner and Wed and Thu lunch, and that's as far as I've gotten.

I'm really hoping my salad greens and arugula are ready to eat this week. They're getting there but still in the very "micro" category. I'm so longing for fresh salad suppers.

I really need to restock my fridge with green things. Dill and cheddar whole wheat quesadilla before whatever deliciously unhealthy things my coworkers will be bringing on shift in an hour.

Some frozen chicken taquitos. I put some bottle chili-mango sauce, some bacon bits and some sharp cheddar and sour cream on top. with beer on the side.

It was a long day and a friend of ours (cheesemakers are good people to know!) dropped off a gallon of whey so it's pizza tonight. Plans are for a conventional cheese pizza with tomato sauce (not homegrown, not to self CAN MOAR), homegrown mustard green and goat cheese, and one with salami. And, like as not, garden salad. Unfortunately, we're damn near out of meat so our grilling has been curtailed.

I'm still not sure - I was met with the directive to figure out a more-veggie-than-not something with the randomness that is our kitchen. So, wild rice, potatoes, one yellow bell pepper, some salad fixins, onions and a shallot. And 4 strawberries and a mango. yargh.

Jan is cooking chicken breasts stuffed with goat cheese and basil, served with green salad, grape tomatoes with a homemade vinaigrette and baked potato.

We had dunch (linner?) at Denny's after seeing Star Trek (2nd viewing was just as good as the first). I had the Grand Slammwich (nom nom nom) and the mister had the Prime Beef Cheesesteak sammich (he wasn't impressed).

Fettuccine sauteed with whole garlic cloves, shallots, fresh basil, sundried tomatoes, and some soy sausage. . .and a spritz of EVOO before serving.

I had leftover indian that I cooked after being inspired by my cooking class.
Rice, cauliflower and tofu yoghurt curry, and chickpea and potato curry in spicy tomato sauce.
Both are great!
