What did you have for dinner tonight? (or lunch or breakfast, or what are you going to have if dinner isn't ready?)[More:]

Dinner's still cooking, but we're having tilapia marinated in balsamic and lemon over couscous with mushrooms and bell peppers, topped with a fava bean and mint sauce/spread. On the side are blanched asparagus and roasted tomatoes.

Dessert may or may not be strawberries macerated in sugar and balsamic with some greek yogurt and honey over the top.
Scallops and sugar snap peas stir fry.

I had leftover eggplant parmesan that I made last night and then took to work. Also, a ton of icing because I set up a reception at work and had to plate a bunch of sweets, including this really grisly giant cookie with icing. I was trapped and forced to eat much sugar. What could I do? I had to cut it and the knife was covered with icing.

I'll be having "corned beef" from a tin, fried up and served with mashed potatoes and braised cabbage, carrots, and onions. Very basic, but for some reason I have been looking forward to it all day and am ravenous.

I had leftover building-blocks from last night's chicken fajitas (sauteed chicken, onion, green pepper, tomato, mushroom) over white rice.

Tonight was the apogee of my Pumpkin Curry efforts to date:

1 skin-on chicken leg, browned in pot
2 Tbsp red curry paste, toasted in pot once chix is going
1 can coconut milk
1 can worth of chicken squeezins
1 onion, large dice
0.25 remainder of red pepper in fridge, small dice
1 Kabocha squash, peeled 2" chunks, rub with oil & salt, broiled about 3 minutes longer than intended.
2 zucchini, sliced 2 mm half-moons
1 cake of palm sugar
1 good shake of fish sauce, maybe a Tbsp
1 Tbsp of Spicy Crab Paste (bun rieu cua)
1 organic lime leaf
(allow to simmer. 3 minutes before serving, finish with:)
green onions, sliced
3 large frozen wild shrimp, pitched straight in the curry. Once cooked, pull out and large dice.
Pull chicken from bone and dice.
Serve over jasmine rice. Wish you had a nice Riesling to accompany.

I had "Rebecca dinner" as my roommate used to call it, as in "only Rebecca would think that this is a dinner."

First I made chocolate chip cookies with the final remaining dough batch, and ate two of those.
Then I made cheese crackers with chervil and indian pepper which turned out well.
Then kale chips.
Then I ate the chips and crackers while watching How I Met Your Mother, which is a really good show.
I also hard-boiled some eggs in case I wanted protein, but I don't feel like eating them. So they will be breakfast.

Mostly I've been distracted trying to shove various vegetables in my rabbit's face hoping he'll eat some (success with 1/2 carrot and cilantro branches).

Boyfriend made corned beef and cabbage with potatoes, but I can't stand the stuff. So I had leftover chicken in peanut sauce over rice.

Corn beef on rye, with thousand island dressing, swiss cheese, and sauerkraut. Had it with potato salad, cole slaw, and a guinness. A delicious take on the traditional Irish American St. Patrick's day dinner.

Being that it's still the afternoon, and I haven't had dinner yet - or really any food since sunday lunchtime - I haven't had dinner yet!

I did have two ladles of pumpkin soup last night, and one and a bit pieces of bread. Also chocolate.

But that's about it.

Added Monterey Jack and fresh parm to the leftover mushroom risotto from last night, made patties, rolled 'em in panko and fried them. Yum. With a salad, so I balanced it a bit.

I'm making myself eat salads recently in an effort to get my weight back to something normal - I'm exercising like mad and getting nowhere, so maybe increased salads will work.

Dinner: Cheese omelette, bread, tomato. Then yoghurt (Muller cherry and chocolate corner thingy).

Breakfast: Chicken, gherkin ["dill pickle"?] and mustard sandwich.

Last night I had a leftover slice of potato and leek pie, and "rice cooked in plum tomatoes with onions and chicken mess". The latter is my favorite new dish. The pie was pretty rubbish because I don't know yet how to make good pie.

Last night I made shepherd's pie because I wanted to use up sweet potato mash from the previous night. The sweet potatoes were curried, so the whole thing was yum.

McDonalds. And I was glad to get that. I walked about 5km around Rockhampton and that was the closest thing to food I could find. Rockhampton may not be the end of the world, but you can sure as fuck see it from here. Good thing I'm only here for one night. The fare in Cairns tomorrow night will be all the sweeter by contrast.

Last night we had steak, fried rice (not take-out, I made it myself), and peas.

For lunch I had turkey on wheat with lettuce and tomato. I hardly skip breakfast but I did this morning because I was in a rush.

Tonight I'm making roasted Teriyaki salmon with mandarin oranges, potatoes, and asparagus. I made it a couple weeks ago and everybody loved it. It's a keeper. Recipe.
