Cookies! Please tell me what cookies to bake. I made a cinnamon peanut butter chocolate chip cookie this weekend that was disappointing in every way. But I have an urge to bake lots of cookies. I have lots of cookies in my cookie-making-stash, but I'd like something new. What's your favorite cookie? Why should I bake it?→[More:]
My usual suspects include russian tea cakes/mexican wedding cookies/aunt grace's butter cookies; cowboy cookies; kolacky; my great aunt mary's mandelbrot-esque biscotti; sweet melissa's double chocolate cherry; salted cashew cookies; peanut butter monster cookies; and all manner of shortbreads.

What's your favorite cookie?

Dulce De Leche Oreos (they do exist or did for a while anyway), but I don't know if they could be made at home.

My absolute favorite cookies are these white chocolate macadamia nut cookies that my mother used to make when I was a little girl and only in the week before Christmas.

Second favorite: slighty gooey and very moist chocolate chip cookies.

Sand Tarts! But forget the cinnamon/sugar and dust with powdered sugar! Why should you make them? Because out of all the Christmas cookies my great-grandmother made, these were my very very favorite and you should make them and eat them and share them and send some to me because I'm a horrible baker though I make wonderful sauces so there.

Shortbread! (not linking, because I've never actually made them myself) I'm also just deliriously mad about plain old, boring old chocolate chip. I don't find chocolate chips here, and our efforts at hacking chips out of dark chocolate bars has been like The Three Stooges Make Cookies... so don't take your chocolate chip cookies for granted.

Also love peanut butter cookies and sugar cookies. And gingerbread. I guess I'm just a moribund cookie traditionalist.

Taz, can't you make chocolate chips by melting your favorite chocolate and then just, like, drip some onto a baking sheet or something and then cool them? YOU MUST HAVE CHOCOLATE CHIPS!!!! This is imperative!!!

Yup, the classic chocolate chip variety is the way to go. middleclasstool says that chocolate can be a very ... pleasurable experience for the brain.

Purely hearsay, as IANAD. But I've heard it repeated often enough and I frankly want it to be true.

Also, I've got a pumpkin chocolate chip cookie recipe in that thread Melismata linked that be damn skippy, yo. They are as addictive as meth.

(And if you're not overly fond of pumpkin, don't let that put you off. I view every member of the squash family with extreme suspicion, will only eat certain of them in certain ways, and pumpkin is not something I enjoy much at all. But in these cookies, it's not a pronounced flavor, and it works. It really does.)

Oh yay! I was trying to think of something fun to do for election day. I need to go check my Big Bucket O' Cookie Cutters and see if there's a donkey in there. (Barring that, maybe blue horses will do?)

I believe I will start with the pumpkin choco chip, then check back to try a second one.

eamon--I am afraid of rosettes. But we do make them at Christmas, at Mom's house. I don't have an iron or a deep frying capable pot.

jonmc--dulce de leche oreos would be easy. Boil the can while making a quick cocoa cookie. Hm. I may have to try that when I have a whole day, instead of an evening.

eamon, my good man, I *buy* doughnuts. But because, you are correct, my life is empty and lacks meaning, I am considering the purchase of a deep frying pot, with thermometer, the better to make scotch eggs and fried mac n cheese with.

I am also doing circles with the logo on them. You could do the B and O if you have letter cutters, too.

My roommate said "kelly, I am not going to eat a cookie every time Obama wins a state. I can not afford to get the diabetus before Obama's health care plan kicks in."

I second snickerdoodles. I LOVE snickerdoodles (mmmm, cinnamonon), and they're really hard to find here.

I've also wondered how oatmeal cookies would be with dried cranberries instead of raisins. Yummy, I bet. Nice and tart.

My mom's humentashin (with apricot filling) and rugaluch are also awesome. (I don't know if I spelled those right).

Now I really want some milk.

Chocolate Crinkles are my favorite cookies. I only have them once a year because they're kind of a pain in the ass to make. (It's not that it's a complicated recipe - it just seems like it takes forever and dirties every bowl and baking sheet.)

The Robin Hood site has some amazing cookie recipes. I never met a cookie I didn't like but I like these the best of any. Cookie perfection!

I haven't tried this recipe yet, but plan on it soon because I love simple! Cheddar Shortbread I'd probably substitute chopped jalepeno for the cayenne pepper, but that's because I love spicy.

I didn't have time to try this but I thought Vampire Cookies are clever.
If I ever try this I'd do pumpkin butter or maybe ginger jam instead of cherry jam. It wouldn't be vampire cookies, but I like the hidden aspect of the filling.

Last night I made the recipe for Oatzravaganza cookies on Chow.com. I subbed hazelnuts instead of pecans, backed off the sugar a bit (will use even less next time, I like subtle-sweet cookies) and bumped up the salt. Yum.
