I have texture issues with eggs (specifically, the whites: so slimy! So rubbery!) so I always have them hard-boiled and eat only the yolk. If the egg is done right, the yolk is a cheerful yellow and a consistent texture all the way through. If not, it's covered in a sulfurous green coating or has a surprise gummy center, which brings me back to "so slimy."

Scrambled medium....which one CANNOT get in the average NYC diner. Order scrambled and one gets a half-cooked folded omlet.

Poached, with Wostershire sauce, a side of crispy bacon, fried mushrooms, hash browns, tomatoes, a big glass of fresh blood orange juice, and a big mug of Irish Coffee. The yolks are nicely runny, and are drizzled over the crusty toasted vienna loaf.

Well, I guess the shells do the dishes - not the eggs themselves once they've been consumed, cos, obviously, they'd be in my belly then, and that would just be weird.

My favorite way lately, was as some soft-fried (basted), with some julienned pork, on a VietNamese rice plate served at a local restaurant, with a side of veggies. OMG, barely legal, I'm sure, due to the "cook it until it's dead" ideas here. But even the leftovers, which wouldn't pass the "should I eat this" AskMe question, were fabulous, especially with the drizzle sauce.

Small amount of olive oil, 2 cloves of garlic sliced very thin, teaspoon of Thai chili garlic, crack 2 eggs, put on lid and cook verrry slowly until cooked but yolks and whites soft as poached. Salt and pepper.

One slice of Health Nut bread, nutty and chewy toast. 3 slices of bacon cooked in the microwave, incredibly crisp. Glass of hot, milky, sweet tea with cardamom.

MMMM, the absolute best way is to use eggs in chocolate soufflé - all nice and warm, just out of the oven....yum!

Course, cheese soufflé is purdy nice now too y'all!

Yes yes yes! And if you serve it with the little toasted round atop the egg, it's "eggs with a hat." I learned to make that when I was tiny, and I still have it for breakfast every month or two.

But tonight, I'm having eggs poached in spicy black beans with garlic and tomatoes. Mmm.
