So, what are y'all going to have for supper? I feel the need for a perfect storm of comfort foods, old and new... [More:]

So I'm having the possibly eccentric combination of oven (over)roasted cauliflower (a new comfort fave, and blame mdonley - he made me think of it), creamed spinach (love. so much.), and my old, old childhood sentimental favorite: fish sticks.

You?
Salmon mousse, left over from mother's day brunch.

I have an excess of to-do list tonight, so I'll probably just leave the bowl and some peppercorn crackers on the counter and eat while I muddle through the tasks.

I made a great pasta last night with braised onions, butter, and red wine sauce. So I'll be having leftovers tonight!
I also made banana bread which I am eating right now.

No idea. I go through phases where I'm really psyched about cooking and making meals, and phases where I could care less and am fine just eating whatever is sitting around, and the past few weeks have definitely been the latter phase.

Oh my good lord, taz. I really really hope my friend picked up cauliflower on his grocery run yesterday, 'cause I has anchovies and local organic garlic, and that looks so good I want it RIGHT NOW!

In other words, I don't know what I'm having for dinner. My friend did a grocery shop for me in town, and apart from rice vinegar, Chinese peanut oil, and lemons (they're over a buck each here!), I just said to get whatever looked good and cheap. He stayed here last summer, so he knows what's scarce/expensive: meat, cheese, veg.

Pretty much all of those recipes are in the "comfort food" realm.

As I'm splurging on gourmet Neapolitan style pizza for lunch, I'll be eating microwaved shahi rajma over rice. It's basically an Indian MRE, but puts anything the US Army has to shame: full of flavor, preservative free, just add rice. I had one yesterday with big chunks of pineapple in it! Best of all, they're $0.99-$1.99 at the Indian grocery up the street.

Fettucine al funghi, made yesterday, chock-full of butter and cream and bloody delicious (if I do say so myself), and salad.

I love the cauliflower popcorn, taz. I'd cook some right now but I don't have any cauliflower. Boo.

I am kind of having a mid afternoon lunch, so probably won't eat dinner. Maybe some cheese and crackers. Lunch has been great though - turkey and feta lasagna (leftovers) and I made a strawberry and raspberry smoothie. I have a bit of cranberry, orange and nut bread for later. mmmmm.

Creamed spinach recipe, please. I've tried a few different ones and have not found one that works very well yet.

(And I have no idea what I'm having for dinner. Likely pasta with a tomato and tuna sauce, which sounds gross when typed out, now that I look at it, but is way yummy.)

Wow, I have cauliflower, some frozen spinach, half and half, and my usual buttload of salmon, so it looks like I'm eating the MeCha average for dinner. I'm gonna do a carmelized OJ glaze on the fish, and maybe come up with some orange/garlic concoction for the roasted cauli to tie it in with the creamed spinach better. Trying to use up what's in the fridge before I go on vacation.

Hmm. I don't use a recipe for creamed spinach. I taught myself to make this version, which I like, based on having learned to make Saag Aloo from a recipe.

Using frozen, I will thaw two boxes of spinach (the failing corner market is selling them at $0.50 a piece, so I have lots) and blot all the moisture off them, by laying a paper towel over the top and pressing with a clean kitchen towel (or anything else you want tinted green). Sautee 3 cloves garlic and 1 finely diced yellow onion in half a stick of butter until translucent, add about 2 teaspoons of salt and 1 teaspoon fresh ground pepper, and maybe 1 teaspoon paprika, curry or cumin. Tonight, I'll be adding paprika. (And possibly a chopped tomato. Like I said, clearing out the fridge) Then stir in the spinach and about 1 cup half and half, and simmmer down for about 10 minutes. I'll top it with some cheese: whatever I have that fits - cotija, jarlsberg or asiago are usually my house cheeses. Tonight it'll get asiago. Let stand a few minutes before serving.

I guess that's pretty normal. I don't like the overly cheesy style creamed spinach. Too much like dip. Too rich. I can't eat that much of it.

1 tablespoon olive oil, plus 2 teaspoons
8 chicken breast tenders (or cut strips from bonesless, skinless chicken breast) You can substitute shrimp, steak, etc.
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1/2 cup green bell pepper strips
1/2 cup red bell pepper strips
1 onion, thinly sliced
1/2 cup whole frozen corn
1 cup salsa - your favorite

Heat olive oil in skillet. Add chicken, stir-fry 3 minutes. Stir in all 3 spices. Remove chicken from skillet, set aside.

Add remaining oil to skillet, and heat over med-high heat. Add peppers, onion, stir fry 3-5 minutes.

Return the chicken to the skillet and stir in the corn and salsa. Stir fry 2 minutes longer, until thoroughly heated.

You can add a squeeze of lime, yellow bell peppers, whatever you desire. You can use fresh garlic instead of powder. You can even have this as a meal with a side salad and rice, but I always put it on tortillas with sour cream, lettuce, cheese, and chopped tomato. It's awesomely delicious, especially with the "fresh" salsa that is sold in the deli case.

Thanks for the recipe!

My creamed spinach is very plain: sautee some chopped onion and garlic paste in butter, add frozen spinach, cook, add some salt and ground pepper, pinch of nutmeg, cook, add some canned milk, or cream if I have, cook some more 'til it's creamy.

The daughter wanted to make a salad (heck, she wants to chop up lettuce, so have at it) with carrots, cucumber, tomatoes, cheese; we had crab cakes (but for the heathen children - mac n cheese), and sweet potatoes. It was delicious!
