BANANA BREAD ALERT [More:]I made some banana bread from the linked recipe and was commanded as soon as I brought it to work to print out the recipe (and convert it to Celsius).

I baked it in a fancy-schmancy silicone loaf pan that I received for my birthday, which made it taste even better as I could actually taste the love.

I have two things to say.

1. I totally thought it said "specklet" and I got all excited.

2. THOSE BANANAS ARE NOT EVEN CLOSE TO ROTTEN! Those are just ripe! Gah!

I love banana bread. I haven't made it in years though, because I tend to eat it all myself. I usually add nuts to my recipe, roughy chopped walnuts, with some halved walnuts on top of the bread to decorate it.

best banana bread is made with completely BLACK bananas. Not speckled, not yellow in any way. They do not rot, they just convert the starch to sugar. more sugar = better banana bread.

bananas are only rotten when they're moldy, end of discussion.

o and pecans trump walnuts every time.

add a teaspoon of cardamom to yr fave banana bread recipe, you will thank me for this tip.

Have you ever made banana ice cream using just bananas and a bit of milk? Add chocolate chunks and chopped walnuts to make your own version of Chunky Monkey.

This has got to be the healthiest ice cream ever (well, it is if you eat it without the chocolate chunks).

You can freeze black bananas. Just toss them into the freezer - no bag or anything needed - and then when you feel like making banana bread, thaw them on the counter for 15 minutes or thereabouts, cut off one end and voila, you can squeeze them out of their skins right into the mixing bowl. I do this all the time and it works like a charm.

And I also add some apricot preserves to mine which is really tasty. Also, banana chocolate chip muffins? Yeah.
