This was my dinner tonight. Made from this recipe. It was awesomely tasty and easy to make.[More:]

I changed the recipe a little - I added grilled peppers and a few leftover olives, and omitted the chili flakes. I also salted the eggplant first and put it in a colander with a plate and a weight on it to remove the bitterness before I grilled it.

What I loved about the recipe was that, usually, eggplant absorbs so much oil, but by grilling it 'dry' and then dipping it in the dressing it didn't seem to soak up tons of oil but it was still unbelievably delicious. There's still enough of the lemon/oil/garlic/mint dressing left over to put on a salad tomorrow, or I might use it to marinade the piece of lamb I bought today.
Wow. That looks amazing. And I just happen to have a big bag of fresh eggplant just waiting to be made into something delicious.

That dressing sounds great.

May I recommend mesclun greens next time instead of iceberg lettuce? ;)

It was cos (romaine) lettuce. I'm not too keen on bitter leaves.

Aaaah, ok. Romaine lettuce is fine. It's iceberg that needs to be exterminated from this earth!

I made roasted parsnips with garlic olive oil yesterday and we had them with bacon pesto pasta. I should photograph my cookage.

Eggplant is on the list of things I really, really wish I liked. But I don't. It's blucky.

The plate is very pretty, though.

Iceberg lettuce is good stir-fried, cut into chunks, because it holds its shape and can be stir-fried really quickly, added at the last minute to everything else in the wok.

Romaine is good stir-fried too, with olive oil and garlic. The flavor gets sorta caramel-ish and totally delicious.

I wish I could cook more eggplant - unfortunately, it's like the one thing mum is allergic to.
