Meu tinkering I’m going to host the Swan family Easter do. I’d like a suggestion for my menu…[More:]

Here’s the menu so far:

Beverages: cold banana bisque, fruit punch, and coffee

Appetizers: Easter chocolate, devilled eggs, chips, and fruit platter with fruit dip

Main course: Roast pork stuffed with chestnuts and apples, baked salmon, sour cream posy rolls, salad, mashed potatoes and peas

Dessert: apple caramel cheesecake, and ice cream

There seems to be something missing somehow, like the menu is a wee bit too basic. I think I need one item more, something that is a little different and interesting. What do you suggest for either an appetizer or a side dish for the main course? Maybe stuffed mushrooms or ….?
Springy things we always have at Easter:

steamed asparagus with lemon and butter
roasted vidalia onions
beehive cake

I have a few recipes with photos I could post later.

The pork and apples seem so autumnal - when I think Easter I think ham or lamb, so that seems an unusual choice. Is that a family favorite sort of thing? Last year I cooked Easter and made smoky grilled lamb skewers with tzatiki sauce, which was really nice - went over really well, since it was seasonal and traditional and yet highly flavorful and a little unusual.

Salmon and peas are definitely springlike -- maybe with a citrus/mustard/dill sauce to complement it and contribute bright flavor?

What about duchess potatoes instead of baked?

Chips are kind of heavy as a starter, and also informally snacky. What about some crostini instead, say artichoke, or rosemary and white bean spread?

For sides, something yellow or orange would be good in there. Maybe some roasted carrots and parsnhips with a honey and lemon zest glaze?

Lamb is so much Jesusier, and asparagus is fresh and pretty, maybe wrapped in something as an appetizer, or something in an endive leaf-- just tossing out ideas, gotta run, but if i a specific recipe springs to mind, i'll try and post it.

An asparagus and ham quiche would be springy and eggy and pretty and awesome ( and kind of Jesusy ).

Instead of chips, how about some crackers and cheese and pate? It goes well with fruit, and it's light-weight enough for a summer appetizer.

Another cool, slightly novel beverage idea (to replace the fruit punch) is an Arnold Palmer. It can be tricky to get the sweet/sour/bitter ratio just right, but it's delicious if you can.

Picking up on ethylene's idea, you can blanch asparagus and wrap proscuitto around it. YUM. That's awesome with a little garlic aoili to dip it in...
