Mayan Cayenne Chocolate cookie recipe I promissed lonefrontranger months ago. [More:]Ingredients

Topping:

1/2 cup sugar
1 tsp cinnamon

Cookies:

3/4 cup vegetable shortening
1/2 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar, packed
2 eggs

1 3/4 cups all purpose flour
1 1/4 cups Valrhona cocoa powder
1 tbsp cinnamon
2 tsp baking soda
1/4 tsp pepper
1/8 or more to taste tsp cayenne pepper
1 cup unsweetened chocolate chips (85% or better cocoa)

Prep

Preheat oven to 350ºF (180ºC). Line cookie sheets with parchment paper.

Topping:

Combine sugar and cinnamon for topping.

Cookies:

Beat shortening, butter and white and brown sugars. Add eggs, one at a time. Add next 6 ingredients and mix until evenly mixed. Stir in chocolate chips.

Use a melon baller to make small balls and then roll them in the topping. Place them on the cookie sheets, about 2 inches apart (they really expand).

Bake 8-10 minutes. They should still be soft in centre. Let cool 5 minutes then remove to a wire rack.

Makes a very savory sweet.
I have been really curious to try a choco-pepper taste. This looks interesting... thanks, bud.

I had to give up on my Christmas gifty plans of making Mayan hot chocolate, a not-to-sweet blend with cumin and ancho chile powder. The combination cannot be beat.

If I make this, I'm gonna try using butter, though. Why would a recipe have Valrhona chocolate and...shortening? I know the texture comes out a bit differently, but still...the flavor? What do you think, arse_hat?

Butter would make the flavour a bit more toward the sweet than the savory to my taste but it would make for a bit of a different mouth feel. I slanted this to the savory. YMMV. Salted butter would alter it a bit more.

Oh of course, I always use salted butter in baking for the salty dimension. It provides balance to sweet ingredients. I know many sources recommend sweet butter, but they don't have the salt-tooth that I am used to....
