I am making beef bourguinon for dinner. It's been a while since I've made anything this involved -- it's kind of fun. Six-quart pot! Three-quart pot! Twelve-inch skillet! Low heat! High heat! Bouquet garni! Wheeee!
For french peasant food, beef bourguinon is hard to beat.

I think it was a covert mission to get me to clean in the kitchen, actually. I tend to start scrubbing things when I'm waiting between cooking steps, and this was basically five hours of chop, wait, sautee, wait, stir, wait, season, wait.

I think I ended up cleaning everything except the pot the actual food was cooking in before we even sat down to dinner.

(And it was sooooo goood. Recipe.)

Great recipe (although I'd have to substitute beef stock for the red wine).

There was a Julia Child one, too, which seemed to have less wine, and none of the brandy. Might be easier for substitutions.

oooh! Sounds lovely.

Jan, I always thought alcohol "cooked out" and so wasn't a problem in dishes, but after reading your comment I looked it up. Good to know.

Taz, that substitution list is wonderfully helpful. I like cooking with alcohol, but I sometimes find myself halfway through a recipe and then find out we're out of something that I don't want to buy an entire bottle of.

Which is why so many of my recipes end up with bourbon in them, actually.... but it's nice to know I have other options!
