Simple chicken breast recipe What kind of chicken should I make for Christmas Eve dinner for my family? There are some conditions...[More:]The 9 adults that will be in attendance include my grandparents, and my grandfather doesn't like anything spicy or exotic (at all- he doesn't even like pizza). The sides that will be served include: cowboy mashed potatoes, stuffing (at my sister's request!), salad. So, what's an easy way of cooking chicken that will be tasty, but not too exotic or crazy? I would love to be able to throw some breasts in the oven with some sauce/seasoning, and have them come out yummy.
Orange marmalade glaze? That's always easy and yummy.

You can make the chicken and stuffing together, in a single pan, like a casserole. Mix sour cream and cream of chicken soup, toss in parboiled breasts, top with stuffing. It's good stuff.

The simplest thing I know, but which is surprisingly super-yummy is to stick a goodly bit of butter under the skin of each breast, season liberally with good salt and pepper and roast in the oven for about 40 minutes (more if they are big breasts, I usually roast a whole chicken for 1 h 20 mins) before letting it rest for 10 minutes in a warm place. It is not "interesting" but does taste awesome and goes with a multitude of sauces, so you could maybe make a couple on the scale of boring -> exotic for people to choose from.

Here's something simple, that you can customize.

Fresh chicken breast tenders
Fresh bruschetta
Large can of petite diced tomatoes
Fresh mushrooms
diced onions
Angel Hair Pasta

brown teh chicken in olive oil until done. Remove and keep covered. Cook pasta according to directions. Saute onions, diced tomatoes, and mushrooms in pan with a little more olive oil until almost done. Then add the bruschetta just to warm it through. Add chicken breasts again, then put it all together with the pasta. Quick, easy, and tasty without being spicy. Makes an attractive dish, too.

You can take skinless chicken breasts, and put them into foil bags (1 per person, make them out of aluminum foil) and then chuck in a slug of olive oil, some fresh herbs, a couple of small shallots and some mushrooms. Bake 'em for a while and then everyone has their own little bag to open on the plate. Looks really pretty.

These are cooked on the range top, rather than in the oven, but it's my go-to chicken breast recipe: Italian Lemon Parsley Chicken (the recipe forgets to specify to use boneless skinless chicken breasts, but you should).

Go to the store and look near the bottled dressing aisle.. They should have bottled marinades-pick what looks good.

Or do what I do. Get a can of mushroom soup, and a little soy sauce. Mix together-add a bit of milk if you like-and pour over chicken breasts and bake. Oh, and if grandpa hates mushrooms just substitute cream of chicken.

He'll eat it. It will be good.

Chicken with a cream of chicken soup sounds YUMMERS. And, as some pointed out, I could then cook the stuffing along with the chicken. Yes, easy as pie! You guys are great.

Baked chicken breasts saltimboca are awesome. Start with boneless breasts, slice horizontally to butterfly open, lay inside a 1/2 slice of proscuitto, a 1/2 slice of good provolone, and 1 sage leaf. Brown on each side in a skillet with a bit of olive oil, butter, and finely chopped sage, then place in pan, cover, and bake til done. Delish.

Heh. In our household, a variant of bunnyfire's recipe is known as "Chicken Love" and is a twice-weekly menu item. Grumpy Old Picky Eaters will eat this dish, I guarantee.

One thing I do is brown chicken thighs (but breasts work) and transfer into a non-reactive baking pan pour in a couple jars of good red sauce (I like Classico) and lay a thick slice of provolone cheese on top of each. Cover and bake for an hour at 350. E-Z.

Simpler? Brown lightly in a pan, brush with a little melted butter and coat with lemon pepper (sodium free if you can find it - most lemon pepper is half salt). Into the baking pan, covered, 350 an hour.

We're doing chicken tonight too - a variant on what for some reason I call Chicken Maryland. It's really good and looks more gourmet than it actually is. One at a time, put the chicken breasts between two sheets of waxed paper and whale the hell out of them with a rolling pin until they're flat. Then put a slice of ham (or bruschetta or prosciutto etc) on each one and a slice of cheese on top of that and a dab of butter on that. Now roll them up - you might have to hold them together with toothpicks or you might not. Dip them in beaten egg and then in breadcrumbs and then, if you're feeling Southern, fry 'em up, or, if you're feeling all health conscious and shit, bake them in a 375 oven for like 20 minutes.

I ended up pouring cream of chicken soup over the chicken breasts, and then covering everything with the Stove Top stuffing, and baking it at 325 for an hour. It turned out so great! Everyone loved it! Thanks so much for all the suggestions, bunnies.
