I made the most incredible ribs last night, so incredible that I have to share the recipe with you.[More:]

I rubbed pork side ribs with a coffee spice mixture I'd bought (although Chinese 5 spice would work, too) and put them on a broiler tray. Filled the bottom of the tray with water, covered with foil, and baked at 325 for about 2 hrs (this works waaaaay better than boiling).

For the sauce, I sauteed 4 cloves chopped garlic in olive oil, added about 2c o.j., 2-3 tbsp honey, 1 tsp hot mustard, and simmered until the honey had melted into everything.

Then the ribs went into a shallow baking dish, sauce poured on top, covered with foil, and bunged into the oven at 350 for about 45 mins-1 hr, flipping them a couple of times during baking. Mmmmmmmmmmmmmmm.....

I'm thinking of calling them breakfast ribs, since they have pork, coffee, and o.j.: all the ingredients of a balanced breakfast ;)

When I first made the life-switch to a vegetarian diet, ribs were the one thing I occasionally craved. It's faded over the past 16 years, but it definitely took the longest to let go.

I served it with this succotash, as I have fresh Dragon Tongue beans and mild banana peppers from the garden, and a simple tomato salad (and rice, of course).

Did you use a coupon for the OJ? lol

No Target stores here, so I had to pay full price. (lol)

Why yes I did, thankee. Wasn't sure if it would work, but it exceeded my expectations. I just didn't feel like bbq sauce, so thought I'd experiment.

Thank goodness I just ate... I would be drooling even more, and as it is my keys are beginning to stick. (lol)

Oh, I should mention that the recipe makes enough for 2 servings of ribs (or 1.5, if you're like me and could eat them until you fall over from protein overload), so you'll want to increase it if you're cooking for more people.
