Yum What I Made for Dinner Last Night which was really really good
→[More:]Chicken & Fresh Corn in Tarragon Cream
Saute about 3 or 4 finely chopped cloves of garlic and a big jalapeno that's mostly but not quite all seeded and also finely chopped in a couple of tablespoons of olive oil.
Scrape the kernels off two ears of fresh corn into the pan and saute those.
Add two boneless skinless cut up into chunks chicken breasts.
Saute the whole damn thing for a while until it's sort of like just about done.
Add about 1/2 cup of heavy cream and two or three tablespoons of dried tarragon & salt & pepper.
Cook it over low heat for a couple of minutes until the sauce thickens a bit.
Serve over couscous. I make my couscous with chicken broth because I'm decadent like that.
