CookyCooky? What would you make for supper if... this is what you had in the pantry: eggs, potatoes, bacon, cheese tortellini (the dried kind you boil), red peppers, green peppers, tomato, cucumber, onion, feta, parmesan, french bread? [More:]

I'm not saying come up with something that uses all those things, but if that's what you had to choose from, and you were hungry, what would you cook?

Yes, that's what I have. Yes, I'm hungry. And uninspired.
No tomatoes?

- frittata with potatoes, bacon, onion, and peppers.

- salad of roughly diced cucumber (salted and drained) and tomato with slivers of onion, dressed in oil and lemon or vinegar if you've got 'em, tossed with crumbled feta.

- French bread on the side.

Or, if the French bread is stale, I'd make a tomato-cucumber panzanella with cubed stale bread. In that case, I'd skip draining the cucs, to get nice juicy dressing. Mmm, panzanella. (If you have white beans on hand, they're very nice in this, too.)

Start water boiling for cheese tortellini.

Chop tomato, peppers, & onion.

Saute peppers & onion in olive oil until soft, then add tomato & your favorite Italian spices (I'd add 1/2 tsp. each of oregano, garlic powder, tarragon, basil, rosemary, thyme, fennel seed, & brown sugar, & just a dash of cinnamon). Cook for 5 minutes, then add 1 cup of water and 1/4 cup of red wine (if available). Bring to a boil, cover and simmer for 15 minutes.

Meanwhile, cook cheese tortellini according to instructions (approximately 10 minutes for al dente).

Drain tortellini and combine with sauce when sauce is done.

Top with parmesan (and maybe even a bit of feta if you're in the mood).

Serve with French bread. Shouldn't take more than 1/2 an hour, including prep.

I would make some bacon, fry some potatoes, put crumbled bacon in fried potatoes. Fry eggs. Serve with diced tomatoes and bread.

Yummm. You guys are good!

I made flo's pasta and sauce, since mr. husband is not mad about tortellini, and he's working tonight. It was delish. I had a couple of nice ingredients, since I have some great fierce oregano from a friend's garden in the Peloponnese, and some lovely Cretan red wine from another friend's village. I grated a ton of Parmesan to put on top and it was wonderful.

Since I still have all the same ingredients less the tortellini, tomorrow I'm going to make Elsa's Panzanella for lunch, and Otis' Potatoes O'Brien with omelet or frittata, and Greek salad for supper.

So now I don't have to shop or think tomorrow: my favorite state!
