Hope me, I'm sooooooo full! In my ongoing saga of learning how to make my own food, I managed to make some yummy oven-roasted potatoes. A LOT of them.[More:] Little red and blue potatoes that came from a nearby organic farm, cooked in a butter-lemon-herb sauce. A lot a lot of them. A lot lot a lot a lot a lot. And I keep munching on them, even though my stomach is literally in pain. I can't stop.

I can see that learning how to make my own food has some hidden pitfalls. And I thought it would *help* me lose weight . . .
Blue potatoes?

Blue potatoes.

Yeah, they're yummy, and look delightfully odd. I find them a bit coarser and earthier (flavor-wise) than red (or especially white) potatoes.

I dunno. They look creepy to me.

Oven fries are great. We use olive oil, kosher salt and black pepper. I like to add rosemary and garlic to the red potatoes, and a little bit of chipotle powder to Yukon golds. I don't think we've used the blue ones yet, though. We had some that a neighbor gave us a couple of years ago, but I don't remember how we cooked them.

Don't make mashed potatoes out of them though, they just end up looking dark grey and kinda gross....

That sounds delicious, bmarkey -- thanks, I'll have to give it a try! (The blue ones seem to a bit more "dense" than the others -- might need ever-so-slightly longer to cook . . . ?)

Try parboiling them for about five minutes. It really speeds things up.

I was reading the askmecha about trying to convince the friend to wear a seatbelt, and when I saw this in "recent comments" I thought it was an answer in that thread. Best solution ever!

There are few problems that parboiling will not solve - especially inter-personal problems.
