What isn’t there to love about empanadas?

I'm a big fan, but I tell one thing not to love: taking a bite of what you think is a fruit-filled desert empanada only to find out it's filled with pork or the like.

I make killer super-easy veg empanadas. It's super simple (though not authentic) if you use refrigerated pre-made biscuits and roll them into circles.
