Help me think of something to cook! I would like to cook a (vegan) meal tonight that involves both a) avocados and b) broccoli. What would contain both of those ingredients? All I can think of is some weird white person fusion burrito and I dunno how I feel about that. Broccoli tastes great on pizza, but would avocados? The world may never know.
i would field this but i have babbled enough.

Do you have to use the two in one course? Could you have the avocados as a starter and the broccoli as part of a main course?

I'm open to one or the other being an appetizer, but I figured if I could combine the two then I'd save myself some effort.

Make broccoli and pasta. (Need a recipie?) Eat the avocado on the side.

Okay, i'm eschewing the who drew faust joke for this: do you have any garlic and citrus like lime or lemons? Any spices? Acceptable starches?
i wonder where iconomy is?

A Google search reveals that someone in the world has made a sandwich containing both avocado and broccoli. Along with: Sun dried tomato, mushrooms, roasted red peppers, cheese, onion, lettuce and dressing.

They don't specify what sort of dressing, though, and who knows how they prepped the broccoli to make it right for a sammich. Anyway, if you could figure out how to incorporate the broccoli, a sandwich might be a good option.

Oooh. Another Google search suggests a salad with relatively simple ingredients. This from "frenchfood.about.com."

Broccoli and Avocado Salad with citrus vinaigrette

INGREDIENTS:
1 small broccoli, cut into flowerets, (reserve the stems for another use)
1 avocado
half a lemon
1 teaspoon Dijon mustard
2 Tablespoons grapefruit juice (or lemon juice)
3 Tablespoons olive oil
salt and freshly ground black pepper

PREPARATION:
1. While cutting the broccoli into flowerets, bring a pot of salted water to a boil. Add the broccoli and cook for 2-4 minutes.

2. Drain the broccoli and run briefly under cold water. Drain again, place in a bowl and chill.

3. Cut the avocado in half. Remove the pit, peel and cut each half into eights. Sprinkle with the juice of the half lemon to prevent it from discoloring.

To serve:
Arrange alternating rows of broccoli and avocado on each of 4 small salad plates. Whisk together the grapefruit juice, oil and some pepper and drizzle over the broccoli and avocado. Serve immediately.

I like sliced avocados with tomatoes drizzled with extra virgin olive oil* as a salad/starter and then the broccoli can be put on a pizza or maybe a pasta.

I love both but am not sure I would mix the two. Good luck and report back please, especially if you succeed in combining the two!

That salad's a good one, which is close to one of my suggestions, which is great because i am officially too tired to be on the internet.
The other was to steam the broccoli if possible and cream the avocado together with some citrus and a little smashed garlic, salt, pepper and use it in some form of pita/burrito thingie with variations with whatever you had around. The broccoli could also be quickly sauteed with sesame oil, garlic, scallions, rice wine vinegar, dash of soy and sunflower seeds and/or pine nuts and you could add some tahini to the avocado mash. Improvise at will with what veganism allows. This could also be put together over some soba noodles and accompanying sauce or rolled in a maki with some vinegared rice.
Some crushed up wasabi peas can be a topping, textural addition or just eat em.

Step 1: Halve the avocado, bread and deep-fry each half.
Step 2: Discard broccoli.
Step 3: Enjoy!

I would just eat the broccoli and the avocado raw, but I'm lazy like that.

Vegetable guacamole?

Hmm, I think it's going to be broccoli, spinach, and avocado pasta with a bushel of garlic.

Why do most broccoli related recipes specify that you not use the stem?

I've made pizza with avocado, but never with broccoli.

Broc coli is E. coli's lesser known brother?

I like the stem, but I also use it in vegetable broth.

I make this broccoli with anchovy paste that's good, but then that's not vegan either.

The burrito thing sounds good actually, especially if you have black beans to go with it.

put them both in a blender with some lime juice and tomatoes. Voila, broccamole!

Hmm, I bet I could add vodka to that...

The bottom of the stem is woody and the rest will tend to take longer to cook than the florets which cook quickly, but many of us find it mighty tasty.
posted by ethylene 11 February | 20:20
If the stems look tough, I sort of half-peel the lower parts of them -- typically the woody bits are just on the outside. But I always eat the stems. Why waste them? They're delicious.

I'm hungry.
posted by tangerine 11 February | 21:20
Yeah, half peel the stems. They're completely edible, and delicious.

Avocado and broccoli are quite bland especially added to pasta. Add what Brina suggested, sun dried tomato, mushrooms, roasted red peppers, cheese, onion, lettuce and make a burrito. One of my favourite's is the breakfast burrito. Black beans, garlic, chilies and anything else you find lying around. I add scrambled egg and a tomato sauce. Roll up in a tortilla and warm up.
Fantastic.
