I have vegan food to eat for Christmas Eve, for a change. →[More:]
Does anyone else do The Vigil, or the Seven Fishes Christmas Eve thing? It's big with Italian-American families, although I'm honestly not sure how big it is in Italy itself.
It's an all night feast, but since becoming vegan it's boring as hell for me because all I can eat are the greens (broccoli rabe and savoy cabbage and stuff like that mmmmmm) unless I make and bring stuff just for me, but this year my daughter and my nephew have also become vegan, and my SIL hired a professional chef to make food for the three of us. I can't wait! The chef lives in NYC and is shipping the food tomorrow on dry ice. She's making it right now, and told us she's making enough for us to have leftovers the next day. Whoo hooo! Here's the menu for the three of us:
Tofu Satay with Coconut-Peanut Sauce
Refreshing grilled skewers, includes marinated tofu, pear tomatoes and green peppers. Served with a Thai peanut sauce.
Savory Stuffed Mushrooms
Fresh spinach, chopped walnuts and a touch of rosemary
Vegan Antipasto
Assorted olives, sliced semolina bread, fire roasted peppers, marinated artichokes, roasted eggplant, carrots, and cauiflower. Served with a roasted garlic hummus
Baked Tempeh with Creole Sauce
served with Cajun sweet corn relish, and rice with parsley and lemon
Shepherd’s Pie with Horseradish Glaze
Millet Sunflower Croquettes
with smoky Black Bean Sauce, served with Roasted asparagus, “sour cream” with ginger and chives, and Jicama, and radish salad with avocado dressing
Roasted Green Beans and Red Bell Peppers
Apple Spice Streusel Cake
The non-vegans will be eating fried smelts, stuffed flounder, marinated cold calamari salad (from The Sopranos cookbook), the world's best fish cakes, king crab legs with lotsa buttah, shrimp something or other, mussels and angel hair, some soaked fish thing that's made with plums and tomatoes (it's very good), New England clam chowder, some other fish things that I can't recall right now, lots of greens, and my favorite thing, olive salad.
