sugarshock friday! I just made 2 dozen lemon cupcakes with vanilla buttercream frosting! If you are in Chicago's Wicker Park area track me down! I'll be passing them out on my smoke breaks...
Hmm... If it snows enough for me to skip driving to Lincolnshire for work, I may track you down. That sounds good. Buttercream frosting is the best. Ever.

It's fabulous, arsey. And, made my way, very easy:

Make yer rice or noodles while you do the following:

stir fry some chopped garlic (and ginger if you'd like) and bite-sized chicken bits (I use boneless, skinless breasts, but whatever) then put aside

stir fry yer veggies (onion and red and green peppers for me)

add the chicken back in the wok or pan, turn the heat down and grate some coconut cream into it (or dissolve it in a bit of hot water and add that way - especially if you want a bit more "sauce-ness" in the end). I think this is the sort of thing you want. This is the exact brand I find here:

and a nice dollop of curry paste. This is what I use:

add some soy sauce if you feel like it, stir well, and let it all marry a bit while you attend to your rice or noodles (basmati or rice noodles for me) and getting your plates ready, setting the table, pouring the wine, etc. Serve the chicken mixture on top of the rice/noodles and gobble it all up, then go get more and gobble that up. Keep doing this until you faint.

By the way, I've found that if you like dishes like this rather spicy hot that making a salad with some kind of yogurt dressing is a nice side dish for cooling the palate and adding a contrast (I really like tomato salad with yogurt dressing). Experiment with different things like a mango-yogurt dressing, or a light saffron flavored yogurt dressing. Basically, though, you don't want it to be really highly flavored, since it's providing a creamy relief to the heat and spice.

I love that you're passing them out in the park, Mrs. P. It's sort of like that guy who hands out $100-bills at christmas. It's the sort of thing people will go back to work talking about. ("I just met this really interesting woman in the park and she gave me a cupcake! Isn't that the funniest thing?")

oh i wasn't handing them out in a park mudpup! wicker park is the name of the neighborhood where i work, i mainly hand them out to the fellows at work first then wander about giving them to random folks and the kind people who sell me coffee, lunch and other flimflams. I always bake 2 dozen so I have enough to give out and I think I might invest in a good carrier. I wish you were here to have one!
