I've actually developed something of an affection for NASCAR. Once you start to know the personalities involved, it's hard not to develop a grudging affection for the damned thing.
You know, my family are auto-racing fans from way back. My dad raced a little. And we know the Unsers (kinda), partly by way of Rick Galles, who was a good friend of my dad's in high school. But that's all indycar, which I like. Of course I also like F1.
I never got much into NASCAR, although there was no reason I wouldn't enjoy it. But I sorta always was a little snobbish about it. Yet, these days, my dad watches all the NASCAR races. But then, he watches all the races.
I used to think a lot about racing, I wish I had done it. What I really, really would like to have done (or still do) is rally racing.
INGREDIENTS:
* 1 quart oil for frying, or as needed
* 4 large potatoes, cubed
* 1 teaspoon vegetable oil
* 2 cups chopped fresh cilantro
* 4 cloves garlic, minced
* 1/2 teaspoon cumin
* 1 tablespoon fresh lemon juice
* salt to taste
DIRECTIONS:
1. Heat the oil in a deep-fryer to 375 degrees F (190 degrees C). When the oil is hot, add potatoes, and cook until golden brown, about 8 minutes. Drain on paper towels.
2. Meanwhile, heat the oil in a large skillet over medium heat. Add the cilantro and garlic; cook and stir for about 5 minutes. After draining the potatoes, add them to the skillet along with the cumin, lemon juice and salt. Stir to coat the potatoes, and serve.
