Tricky but possible. I ate at a soul food place in Bridgeport called Big Vic's where the collard greens were cooked with smoked turkey rather than ham hocks and had the cook not told me, I never would have known. But some of the joy of any type of 'soul food' (read: peasant cuisine, every ethnicity has it's soul food) is eating it the 'old-fashioned way,' the way it was meant to be, so one must step carefully.
