Darn it. Waffle House won't serve my chopped steak rare anymore.→[More:]I've been getting "chopped steak, rare, eggs, scrambled, hashbrowns, smothered, covered & chunked" for years. Then out of nowhere today, "They cain't cook it rare no more." "Why not?" "Cause 'ey say-yed we cain't." Pfuj.

Actually, it's only uncivilized people who like their meat well done. Civilized people with good taste eat their meat (steaks, burgers, whatever) bloody rare.

Rare meat is for people comfortable with the fact that they're eating meat. It still tastes like flesh, not leather. Plus, it's sooo tender and juicy.

Just needs cooked long enough to kill whatever's growing on the outside. An aged steak gets the way it is by carefully culturing Clostridium botulinum and people pay a premium for it. I'm a medium-rare man myself, but I've never made any claims of good taste.

Steaks rare, that's one thing. When it comes to steak, I like to see the pink.

Chopped steak? i.e. hamburger? Blech. NTM that's where the real risk of e. coli comes in.

I love the quote from "The Cowboy Way", when the waiter asks Woody Harrelson how he'd like his steak:

"Just knock its horns off, wipe its nasty ass and chuck it on the plate".

I personally like my steaks medium-well, but I think it's funny anyway.

Wagyu beef at Sushi Ran, the local high-end sushi joint == OH.MY.GOD.

1 thin slice, flash seared a smidge past blue, tiny dollop of mushroom (?) sauce, presented nigiri style over rice. Full mouth orgasm.

Go when a different cook is working. Or talk to the manager. It depends on whether the district manager or above made the policy or whether the manager decided to do it. I think corporate was trying to quit serving rare burgers even when I was there over a decade before, but if you make friends with the cook magic happens.

You can always try a different Waffle House too.

(Night cooks generally do their own thing. Just sayin'.)
