What's cooking, good looking? In my oven right now, roast chicken massaged with tarragon, rosemary, garlic butter, ginger glazed carrots, shallotts and asparagus.
That sounds so good. This morning I made sausage lasagne, eggplant parmigiana, 2 quiche lorraines, and a pot of black bean soup. But we're not having any of those for dinner - those are make aheads for the week, to make life easier for everyone.
For dinner we're making chicken quesadillas. We marinate the chicken for a few hours, and then grate a few different kinds of cheese, and shred some lettuce. The chicken gets chopped up into tiny pieces, and sauteed. Then we put tortillas on the dry, hot griddle, and cover each tortilla with the cheese, and then cover half of it with lettuce and chicken, and fold it over like an omelet, and cook it for about 2 minutes on either side.
I actually don't eat any of these, except the soup. But I do love cooking! It's so therapeutic and lovely.
Reading threads such as this can be so terribly depressing. I wish I could spend my mornings cooking quiche lorraine.
I mean -- how do you get all your coursework done so that you can spend the week in the lab?
Today I ate a big bowl of Bulgarian yogurt with honey and bannana, a delicious sandwich, and some Japanese takeout. And that seems like an average to good day for me.
Also: Cocoa Puffs.
I made myself a breakfast burrito: scrambled eggs with pepper jack cheese, slices of avocado and salsa in a warm whole wheat tortilla. Yum. Then for lunner - or dinch - I had the leftover eggplant parmigiana I made a few days ago. And an apple. And because thanks to mefi I got hooked into this site I ate some peanut butter, too. From the jar. And then some chocolate ice cream. So I don't think I'll eat anymore today. But I am finally getting around to making hot pepper jelly and that's a whole long project which will take up the evening.
see, as to Cocoa puffs, I don't know. This is because as a newly minted Austinite, I have been sampling the HEB generic brands for the last few weeks. I've never really eaten the candy cereals before, but I can definitely vouch that both Coco-Rageous and Coco-Comets are, in fact, delicious.
Boiled some pasta. In a frying pan, sauteed crushed garlic, olive oil and black truffle oil. Cooled off the pasta, added foil-pack tuna, mixed it all up with the oil and served with a light salad and white Burgundy. A little salt and pepper brings out the truffle oil's amazing aroma and taste.
For an actual meal I had a huge bowl [actually a small casserole dish] of leftover vegetable stew with a hunk of colby and about half a loaf of bread and butter. And 4 chocolate donuts. One of these days I'm gonna start putting on weight. I swear.
The husband is making chili, as is kind of a Sunday night tradition of ours. If it was up to me, we'd be having Guinness for dinner and one more for dessert, so it's damn lucky it's not up to me.
Amber, your taste buds have obviously evolved to the point that Cocoa Puffs are passe to the palate. I suggest Count Chocula or, if you're really feeling haute, Cocoa Pebbles.
Late dinner here. My wife got back from Kansas City with some flank steaks stuffed with portabello mushrooms. She grilled these along with some sweet potato and pearl onions, made a Waldorf salad, and opened up a nice bottle of shiraz.
