Vegan & vegetarian brunchmeisters I need your help!
I've been invited to a brunch tomorrow morning and the host has worded the invite this way: "We'll make pancakes, veggie sausages and we'll keep the coffee brewing. Feel free to bring something tasty to eat or drink.Vegetarian food welcome (and vegan treats *loved*), but no meat,please."
I've had food intolerances in the past and know how nice it is to be able to relax and enjoy a majority of the dishes at a gathering without compromise or worry of repercussions. I've scoured a couple dozen recipe sites, but am out of my element in this case. Fresh fruit is always a possibility, but it would be nice to take something prepared, too.
Any and all suggestions greatly appreciated. Thanks!

also eggs benedict with spinach or mushroom substitutes
Most probably, for the banana smoothies try soy milk, but no responsibility for how it tastes, I like the idea of entertaining where everybody brings something....enjoy
ok so as not to waste the smoked salmon probably suggest no more than 400 grams you may get 1/2 dozen rolls from memory, its been a while since i have made them.
Just fixed veg lunch for some friends last week. The biggest hits were two kinds of wraps, one vegan and one vegetarian.
The vegan:
Spread a base of good guacamole on a large flour tortilla. Add a mix of olive-oil-sauteed sliced onion, garlic, and red bell pepper. Wrap it up, then wrap the wrap (hee) in foil.
The veg:
Spread a base of cream cheese on a flour tortilla. Fill with sliced cucumber, chopped tomotoes (pat these with paper towels so they aren't so runny), and, er, I know there was some other delicious veggie, but I can't remember it. Tomato and cucumber will do you good anyway.
You could do these as smaller snacks by using smaller tortillas.
Sushi hand rolls are excellent too. Leave out the fish, stick in a bunch of veggies in there, add some wasabi in a couple just for general amusement. The wraps are an excellent idea, they can be cut up into whatever sizes are appropriate.
Or pop tarts. You can never go wrong with pop tarts.
