I knew before I looked exactly who you were mentioning, Eide. And in that vein, here is How Will I Know.
The movie Welcome to Woop Woop (which I have never seen) has some fantastic covers of Rodgers and Hammerstein songs. I learned this when our college radio station was trying to sell some of the demo cds that they'd received and I heard them play the most cracked-out cover of all time: Junior Vasquez' version of Climb Every Mountain. This isn't that version, but it's close enough. This version also includes a bonus techno version of the Lakme Flower Duet!
I love great covers, and am made sad by lame ones.
I can't think of very many of my favourites, for some reason, but I've loved this one since I first stumbled on it a year ago or so. Such an interesting juxtaposition of original artist versus cover artist:
The Onion's AVclub has done that great series (UnderCover)for a couple years now, and I gotta say that I've heard some awful covers, but then, every once in while something fucking terrifyingly beautiful comes along like this:
That's all I've got for now...Man, a good cover is a magical thing. It speaks to how a song, by itself, can be great, regardless of artist, etc. It can tell you volumes about the artist who chose it. So great.
Can't let this thread go by without noting WFMU's MASSIVE collection of Stairway to Heaven covers, an incredible mix of fascinating re-definitions, obvious jokes, noble failures and evil intent. My demented faves include The Rock Lobsters' B-52s style, Neil Pepper's 'Vegas Elvis' style, John Paul Young sounding like John Paul Young, Rolf Harris' 'Tie Me kangaroo Down'-ishness, Pat @#$%! Boone, Tiny Tim's lounge-style, Nashville Super Pickers' bluegrass (damn good!), Dolly Parton (pleasant surprise!), The Red Army Chorus, Frank Zappa... need I go on?
Don't forget the Ukulele Orchestra of Great Britain who have reduced everything to little string things yet incredibly NOT ruining most of them, including...

The Guords's Gin and Juice and Dynamite Hack's Boyz In The Hood are my absolute favorites. I'm quite fond of All American Reject's Womanizer (the beer bottle percussion's is kind of out there).
One of the few things I miss about OH is CD101's Undercover Weekend. So. much. fun.
