General Tso's ...Salad? In my ongoing effort to EAT MORE VEGETABLES, I have decided to turn my leftover General Tso Chicken chunks into a salad ...but how?

I've got some greens, a few stalks of celery, kimchi, olives, sun dried tomatoes, roast sesame seeds, a world of nuts, a lone onion, and an embarrassment of half-finished condiments-sauces-what have you. How do I make this into a new tasty dish that consumes mass veggie matter?
1. Make a dressing out of garlic, honey, soy, and sesame oil - about 1 T. each. Mix in some sesame seeds. If you have them, add a small amount of minced garlic and a small amount of minced ginger.

2. Slice celery thinly, diagonally across the stalk.

3. Slice onion very thinly.

4. Put dressing in the bottom of a large bowl. Add greens, onions, celery, and toss with tongs to coat all in dressing.

5. Chop General Tso's chicken small. Mix with (cashews|pecans|walnuts|peanuts).

6. Plate salad and put chicken/nut mixture on top.

7. Some orange sections would be great with this if you have them.

Wowzers Miko, that sounds like an awesome base for a salad. I modified it a bit.

I was craving a warm salad - so I put a dash of peanut oil in a pan along with a bunch of sesame seeds. Waited til hot, threw in the onions and chicken (cause raw onion always makes my nose hurt, also cause hey! an excuse to fry onions!) Used some hot sauce instead of garlic or ginger and more or less did the same thing you describe.

It was lovely! A warm spicy-sweet, veggie heavy salad that didn't read as "salad" to my brain. I have a new weapon in my arsnal of reprousing leftovers, which is awesome.
