I call it the Quick-and-Easy-Not-Quite-as-Bad-for-You Chocolate Cake that takes me around 10 minutes to make (not counting baking). Other people call it the Six-Minute Vegan Chocolate Cake. Moist and tasty nearly-instant gratification, and you probably have all the ingredients sitting around. [More:]

I didn't mix it in the baking pan... I figured it was better to spend 20 seconds washing out a mixing bowl than a half-hour cleaning flour spill and batter spatter off the counter top.

My mom used to make one like this out of the Wise Encyclopedia of Cooking during the 1980-era recession (no butter, no eggs, no shopping, cheapy-cheap!). It was a good pantry standby when we had nothing else yummy.

Hey, taz, that's wacky cake! Here's my cranberry-pear variation.

I'm with you; I'd rather mix it in a bowl than clean the inevitable splodges and splooshes off the counter.

My mom calls this Goofy Cake, but I've also called it Missionary Cake because missionaries to far-away countries wouldn't have to worry about finding spoil-able ingredients to make it.

And it is so, so good.

I received the recipe below in my inbox one day and thought it sounded interesting. One night when I was craving a snack and had nothing in the house, I remembered the recipe and made it. It's not bad. It's not fantastic, but it's definitely not bad. The best part? It takes 5 minutes from start to eating! Plus the only dish to wash is the mug.

5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous).
