woowoo! I have a can of cream of chicken soup! Now... what to do with it? It seems like half the recipes I find while searching for pretty much anything include "a can of cream of chicken soup" - and I don't usually find these readily available here. But I just happened across this at my little grocery... [More:]

and, despite seeing so many recipes that call for it, I can't remember a single one of the many that I've sighed about.

So what is your favorite recipe using this as an ingredient? but don't give me any that also include another "cream of" soup, 'cuz I only have this one!
Is it concentrated (like Campbells) or in its eatable state?

I have a great recipe for a crunchy chicken casserole that uses 1 can of Campbell's Cream of Chicken soup. It's not fancy .. but it's so good and so easy. Even though the recipe calls for one cup of rice, I usually end up adding more.

2 cups cooked chicken
1 cup cooked rice
1 can cream of chicken soup
1 cup chopped celery
1 tsp lemon juice
3/4 cup mayo
1/2 cup finely chopped onion
1/2 cup (one small can) sliced water chestnuts
1/2 cup slivered almonds
crushed cornflakes

Mix everything together in a big bowl except the almonds and cornflakes. Put in greased 9x13 pan. Sprinkle almonds and cornflakes on top. Bake at 350 for 30 minutes.

um... I thought it was concentrated, but I guess not. The directions just say to heat it up. :(

i'm planning on trying this recipe this weekend:
Cheesy Chicken & Rice Casserole

(lots of pictures on the net of people trying this and liking it)

SERVES 4 -6 (change servings and units)

Ingredients
1 (10 3/4 ounce) can Cream of Chicken Soup
1 1/3 cups water
3/4 cup uncooked long-grain white rice
2 cups frozen mixed vegetables
1/2 teaspoon onion powder
4 boneless skinless chicken breast halves
1/2 cup shredded cheddar cheese

Directions

1Stir the soup, water, rice, vegetables and onion powder in a 12" x 8" shallow baking dish.

2Top with chicken. Season chicken as desired. Cover.

3Bake at 375 degrees for 45 minute or until done. Top with cheese.

4Serve with a green salad and bread of your choice.

I have lit up the FoodzSignal for Condensed Soup Man (who some of you know as BOP). If he doesn't have at least a dozen recipes involving cream of chicken soup I'll eat my hat. Simmered in soup, of course.

One day I was very hungry, but the only food in the pantry was a can of condensed cream of chicken soup. So, having no milk, I dumped it in a sauce pan and stirred in a can of water.

Don't do this.

White Trash Chicken, AKA Doublewide Chicken, AKA Chicken Love:

In a cast iron skillet, cook three slices of bacon, set aside. Leave a little grease in the skillet, and cook three thawed boneless skinless chicken breasts therein. Set aside. In a 4-qt saucepan, combine diced carrots, celery, and red onion. Saute (use some of that bacon grease) until cooked, about four minutes. Add a can of water chestnuts (drained). Add a can of baby corn (drained), or a can of Niblets, whichever floats your boat. Add one half a small red bell pepper roasted and julienned. Add a metric shit-ton of grated cheese -- I like Colby Jack. Add a can of cream of chicken soup. Add bacon, crumbled. Add chicken, diced. Cook some egg noodles, rinse and add them in. Stir it all up and pour it into a casserole dish. Top with another metric shit-ton of grated cheese and slivered almonds. Bake at 325º for twenty minutes. Sprinkle with chopped parsley. Nom.

Oh, I forgot: if you're all fancy-shmancy, toss in some tarragon and basil.

Toss small cubes of chicken breast in to a fry pan with some olive oil. Put some egg noodles on to cook. When the meat has colour add the soup. Drain the noodles and set aside.

To the soup meat mix add some fresh diced veg. If it's not a good time for veg and a frozen mix. Salt and pepper to taste. Simmer 15 minutes. If it looks a bit dry add a bit of water or white wine. If it's to wet just simmer a bit longer.

Mix in noodles. A bit of fresh sage is nice.
