I fought the kidney and . . . [More:] I won!

I won the battle, at least. I did prepare it, cook it and eat it. And it was reasonably good, tasting as it did of mushrooms and the wine in which I braised it.

But I think the kidney has won the war. I really can't see myself cooking that again. Preparing the kidney was a huge pain in the ass. There were all these little clumps of inner core tissue that needed to be cut out. And the smell -- DAMN! It's decidedly unpleasant to have a pissy odor all over your kitchen, your kitchen knives, your favorite cookware . . . your HANDS!

From now on, liver will be my main organ meat. Or I'll leave the kidney preparation to the professionals.
Oh yes. I had a great aunt who didn't quite clean the kidneys enough, and therefore they tasted a little bit like what you describe. There are far easier ways to get a nice taste of wine and mushrooms.
