Huevos Rancheros Thread: GO! x-posted from ask me[More:] I know MeCha has some amazing food innovators, so I'd love to hear how you make huevos rancheros amazing, or what you look for in amazing huevos rancheros. No detail too small, all opinions welcome!
Must have corn tortillas, or at least fresh cornbread.

If you're ever in Austin, this place has the best huevos rancheros in town. (Be sure to order them with a side of batter-fried bacon!)

I've never had "real" HR. Just salsa dumped on scrambled eggs; which is good in it's own way. We have breakfast tacos every couple weeks or so (soft flour tortillas, scrambled eggs, salsa, bacon, cheese).

The ones that anthropoid links to look delicious.

Every August, the city of Hatch, New Mexico, holds the Hatch Chili festival. Around that time, Central Market here in Houston gets loads of chiles from Hatch, and sells then raw, roasted, and as part of a number of items, including their cornbread and flour tortillas. Normally I prefer corn tortillas, but these soft, plump flour tortillas with the chiles cooked into them are too awesome to resist. I load some lightly scrambled eggs, crispy shredded hashbrowns, and simple salsa into a couple of those tortillas and enjoy.

Lard, not butter. A few small bits of tri-tip steak, marinated briefly in lime juice, black pepper and garlic. Rancho Gordo "ojo de cabra" beans left over from the day before, and if there are still a few bits of mushroom in there, so much the better.. A sprinkle of minced shallot. Really good fresh eggs from happy chickens, with yolks like marigolds, gently cooked sunny side up. A small bit of good monterey jack cheese, and maybe a forkful of goat cheese too. An avocado that you have selected because it was dense, firm & not overly thumb-printed by neurotic shoppers, and whose little stem nubbin came off with just a little nudge. Good, thick handmade corn tortillas. A healthy sprinkle of kosher salt, and an enthusiastic grind of black pepper.
