What is/was for dinner?→[More:]
We're having some pork tenderloin (marinated in a homemade teriyaki-style thing), roasted potatoes, and buttery cabbage.
Um, I really messed up the whole healthy dinner thing tonight. I had fries with mozzarella cheese and Texas Pete on them. And then some beef jerky. And then some Twizzlers.
I had Mexican chicken. Mexican food is hard to come by here, the main brand available in the supermarket being Old El Paso Tex-Mex stuff. But I was craving something spicy, so I bought a packet of fajita mix, made a marinade with olive oil, lemon juice (forgot to buy a lime), cilantro and the spices. I took some chicken breasts, cut slits in them, and soaked them in the marinade for half an hour.
Then I cooked the chicken on a hot griddle. I also had a grilled pepper, and ate the chicken and pepper with salad (plus a drizzle from a newly-made batch of Hidden Valley Ranch Dressing). There's enough for me to have some cold tomorrow. It was good, but I must find out how to blend my own Mexican spices.
I followed it up an hour later with blueberries and fat-free Greek Yoghurt. Now, six hours later, I'm having a bowl of porridge. I'm still jetlagged so I'm eating breakfast at half-past midnight.
Italian spiced pork; interesting recipe, but too much lemon - next time, about half that amount. Had it with mashed potatoes and braised red cabbage. Just had a small snack-ette consisting of a small bowl of walnuts and raisins.
I don't know! I'm not in charge tonight, which is nice. That could mean eating out but it could mean a surprise home-cooked meal, too. Last night I made blackbean/tortilla casserole, basically like Sil's Mexican lasagna, which hit the spot.
Well, my chouquettes went awry, but I was able to turn them into a lovely pancake. Which I had served with herbed goat cheese and nuts and then had fruit poached in port for dessert.
My almost-five-year old daughter got to choose dinner tonight, as a small reward for getting into the pool for her swimming lesson today. She's a big fan of the water, but had sorta developed a weird mental block.
Anyway, Evelyn picked chili. She LOVES the chili I make. So, I made it. It was pretty good. It's been way better since I started buying meat ONLY at the local butcher's.
Roast chicken w/ homegrown carrots, squash, and beets. The chicken's from a friend in Bremerton who managed to grow cornish crosses to dress out around seven pounds an eight weeks. Poultry love pasture.
Black bean and squash empanadas. Squash is roasting right now, and I need to go start the dough so it has some time in the fridge before I need to roll it out.
I can't decide if I want to use the feta up in this, or save it for a salad tomorrow. Will randomly decide when I'm mixing the ingredients.
A friend left a mason jar of homemade chicken soup on my doorstep. Yay it is good to have friends! I had this with a nice chaser of the scariest cough/cold medicine I could find at the drugstore. I should be passing out momentarily. Yay.
Didn't make dinner tonight, just snacked, but tomorrow's dinner is in the slow-cooker already: Yankee pot roast, but with cubed top sirloin steak instead of a roast.
