Anyone here make applesauce? Have a good recipe? [More:]
I picked a hundred pounds or so of apples off my tree today. Most will just go for plain eating over the next few months, but I was also thinking of making some applesauce (apple pies too). I've never made applesauce before. I figure I can freeze some to keep it longer. Any advice?
sorry... no recipes here, but homemade applesauce sounds FANTASTIC.

Via elizard, who was just talking about this earlier today:

Core & peel apples and cut into chunks (say, about 1/2", depending on how chunky you like your sauce or how long you want to be simmering it). Put into pot along with some sugar (to taste--you can adjust it as it cooks), some cinnamon &/or fresh-grated nutmeg &/or other pie-type spices that you might like (again, you can adjust the seasoning as you go along) and a bit of water (enough to keep the apples moist while they heat up and release their own moisture). Cook on med until it starts going, then reduce to low & cover. Simmer until it's the way you like it.

This recipe is not tested for canning in jars, but should freeze fine.

I've never made it myself, but every recipe I've seen for applesauce includes a little lemon juice and a little sugar. I like ginger and raisins in my applesauce. Yum!

Bourbon and apple sauce love each other. A lot. And, if you cook your bourbon apple sauce in a crock pot (highly recommended) you can lift the lid and inhale the vapor for an apple-infused insta-shot!

you definitely need to add some acid (lemon juice is fine), cream of tartare or whatever so that the apples don't turn brown / oxidise. they will do this even if frozen.

Do you have a crockpot? I made this recipe this weekend, and it was delicious! As far as I know, it's not tested for canning either, but it sure was easy! We just kept it in the fridge and ate it all before the week was up.

4 lbs tart apples, cored and sliced thin
1/2 cup sugar
1/2 teaspoon cinnamon
1 cup water
1 tablespoon lemon juice

Mix apples (about 12 cups) with cinnamon and sugar and put into crock pot.

Pour water and lemon juice over apples. Cook on low for 6 hours or high for 3 hours.
