What's for dinner? [More:]I'm making Linguine with Lemon, Garlic, and Mushrooms, salad, and asparagus. The recipe is Nigella Lawson's. I saw her make this on the Food Network. I swear to god she said, "I always like a good impaling" very suggestively as she was juicing a lemon with a reamer. Whoo, I had to fan myself.
Cheddar chicken nuggets. They were on sale!

Comfort food: homemade meatloaf, mashed potatoes and gravy, and corn. That's what I'm making for my son and my husband....I'm having omg kale salad.

Considering I just had lunch, I have no clue. I suppose it depends on what they're servng in the dining room at work. I had vague plans of stopping by this place, but I see that they're closed on Mondays - this makes me sad, as I was kinda craving tacos al pastor. Oh well.

I dunno - MuddDude's cooking today. I'm guessing either sausages and cheesy/brocolli rice, generic asian chicken, or pasta with brocolli.

Our meal plan is pretty much the same every week. Makes grocery shopping easy.

I've got some steamed chicken in the fridge; It's either going to end up in a satay sauce over brown rice or perhaps naked with whole wheat ravioli. I always throw in a veggie side of some kind, too.

Since I also have a 14.5-mile commute home from work by bicycle every day, I will likely snarf down some other things in the course of the evening, but those are more cupboard-scouring ventures and not planned in advance.

We're having what we call "Chicken Bits". Boneless chicken, cut into nuggets, seasoned with chipotle and a little flour, then roasted in the oven. Dip into bbq sauce. Sides of garlic mashed potatoes and peas. Chocolate chip bars for dessert - homemade and the easiest recipe ever. Your dinner sounds great, LoriFLA except for the mushrooms, which I cannot abide. I could probably substitute something like broccoli or asparagus for it, though.

We should have a recipe swap or a Meta-cookbook.

I'll be going to a potluck for Rebekah, who's returning to Minneapolis this week. So figure a bunch of vegan casseroles, a few more ambitious hors d'ouevre and dessert offerings, and at least one possibly-ironic Southern classic.

I had the last of the turkey/ratatouille stew I made the other day, with steamed fresh broccoli, cauliflower and courgette, followed by fresh pineapple and Greek yoghurt.

I rubbed a piece of pineapple on my face (it gives you the softest skin ever, due to the bromelin in it) and will rinse it off before I go to bed.

The plan was either: Coucous salad with squash, chickpeas and cranberries (in a vinaigrette) or squash, chickpea and onion salad (in a tahini dressing), or roasted squash with walnuts and goat cheese, or curried squash over rice (clearly, I have a squash that wants roasting). But right now I'm so drained from work I may just go home and have a scotch and a hot dog.

However, if I lose one more pound I will have wiped out my holiday-related weight gain.

Last night I had the dinner I was planning for tonight (rare steak, mustard greens sauteed with garlic and red pepper flakes, potatoes roasted with garlic and rosemary, salad with blue cheese vinaigrette), and the other thing I want to make (lamb stew with figs) will take too long for dinner tonight, so I will probably stop on the way home and buy stuff for the lamb stew to make tomorrow, and see what looks good for a quicker dinner tonight.

I'm craving fish, but Monday's a bad day for fish, so.... I dunno. I may just do white bean and kale soup.

I had a late lunch at the Max burger bar and when we were done I showed Perle the play area. Mistake. One and a half hours later I managed to basically kidnap my own kid by running out the door with her (not dressed for outdoors) and telling her to please co-operate as I did not want to miss another bus. She had just thrown her best tantrums which include the phrases "no, NO, and NU-UH" inside when I asked her to get ready to leave, with a couple of "you make me mad. I don't like you" and random running away from me screaming scenes thrown in for good measure and yelled out "No no STOOOOOOOOOOOOP" if I even motioned to her jacket. I swear everyone in the burger bar was giving me "that look". Mom can't nadle her two-year old. Oh yeah. As soon as we were outside she hugged and kissed me (wtf!?) I guess to make up for being a brat and pushing me to the limit. or maybe it was because I didn't loose my temper or raise my voice, or maybe it's because she finally understood that if we missed that bus we'd be stuck in the wrong city overnight? who knows, it was the cutest unpromted kiss though. Sneaky gal! So, for dinner, I'm having a beer. It's called "the surprise" and made by Kerteminde Bryghus. seems apropos.

It will either be beefalo burgers, beefalo meatloaf, or pork tenderloin (manner of preparation TBD). I guess whatever it will be, I should get it thawing. Last night was spicy stir-fried chicken with celery.

Last night, the S.O. asked me if I wanted her to pick up dinner for tonight from this local sandwich joint, which is freaking awesome and right around the corner from her office. I'm hoping she's still in the mood for it, but it'll be an hour or so before I find out.

I have NO idea. I'm about to leave to go to staff a table for my organization for a suicide awareness convention at the local big state university. That will go until 9, and then I'll have a 30 min drive home. I had a big breakfast at about 10:30, and then a fish sandwich and fries at ~3. I'm hoping not to have to do dinner.

I'm going to have whatever I can squirrel out of the kitchen without mom noticing. Which will probably be some crappy microwaveable dinner.
Of course, microwaveable dinners are pretty much standard fare in my household, but it sucks when I only get one shot at nuking them and can't keep checking them.

Thanks, it was! And I took the leftover mustard greens and dumped them in with the leftover potatoes and heated them on the stove this morning, which ended up basically frying the greens, which was not my intention but OMG was it a yummy breakfast.

Though I've felt garlicky all day. Given that my co-workers keep talking to me anyway, I can rule out any vampires in the office. (The lady on the bus who ran off one stop after I got on? Her I'm not so sure about.)

I developed chills, fever and aches and dizziness this afternoon, so dinner was a forkful or two of scrambled eggs, a bite of pear, a bite of banana, and a spoonful of cottage cheese. I don't know if these are good things or not, but they were what I had on hand that didn't require much making and sounded good. I took a couple aspirin when I got home, so I'm feeling a bit better now. My son was sick a couple of days ago, so maybe I've just got a touch of that. He was over it in a day.

I had a brisket and hot link sandwich from Famous Dave's. Yum!

That linguine looks delicious. I hate mushrooms, though - but I bet I can make it without the mushrooms.

Pups, specially for you:

1 small red onion
1 small can tomato paste
3 medium tomatoes (sliced in thin wedges with the seeds intact)
1.5 cups of black eyed peas (i'll give the recipe for raw ones, although canned will work in a pinch)
1 habanero
.5 cup whole smoked shrimps (this is optional and so far the only places i know that carry them are african grocery stores - substitute with diced steamed then deep fried meat of choice)
.5 cup palm oil (also hard to come by, canola is a decent substitute though)
3 overripe plantains (the riper and blacker, the better)

Plantains: slice each plantain diagonally (about 5 slices per plantain). sprinkle salt and a dash of cayenne pepper over plantains. deep fry in vegetable oil or canola oil until golden brown. Drain on paper towel.

Beans sauce: (using raw beans - canned or frozen are precooked so you can skip this step if you use that):

Soak beans in water for an hour or more...the longer the better if you want to avoid smelly farts :)

Cook beans in water until very soft, then add a pinch of salt (tip: it cooks faster in an old fashioned pressure cooker!)then strain any excess water.

Finely chop the onion and fry in canola oil until translucent. Add a pinch of curry powder to the oil to season it. slice habanero into quarters and drop in oil, let fry on medium heat for about 2 mins. Add tomato paste to oil. Then add sliced tomatoes and let all simmer for about 15 mins till tomatoes disintegrate. Add smoked shrimp (or meat of choice that has previously been steamed soft then deep fried), let simmer for another 5 mins, season to taste (i prefer adobo seasoning or maggi beef boullion). Pour the entire sauce into the pot with the beans and mix until incorporated.

To serve, dish as many pieces of plantains as you can consume, then add a couple of spoons of the sauce on the side.

Trust me, that shit is GOOD!

We stopped by Whole Foods hot-food bar after my afternoon class, and picked up whatever each of us wanted --- what a happy, lazy dinner that was.

I had:
- a huge pile of mixed greens with peapods, shredded carrots, olives, and two kinds of tofu;
- a little pile of spicy noodles with red pepper and scallions;
- a tiny slice of spinach & artichoke tossed with feta and baked.

Usually I find the WF food bar terribly disappointing, but tonight it made the perfect little dinner when I didn't feel like doing anything but sitting and eating. Ah!

/me hastily cribs notes from Ramix! w00t!

Tonight is Chile Verde, made from a big whack-up of tomatillos, pasillo peppers, onion, pork butt, and a couple of 'Pup's dried peppers, and a dash of cumin & cinnamon. It's been all crockpottering about the kitchen since this morning.

A note to the folks who put recipes on the internets (not anyone here): If your recipe for "Foo" includes "add 1 can of Foo", that's not really a recipe, so much as detailed operating instructions for your can opener. Especially for values of foo like Chile Verde.

Ha! Man, that sounds good, though.

Me: a quick re-heat of last night's pasta and sauce. The pasta was plain, the turkey meatballs were fine, but the sauce was really nice: chunky red sauce made from a basic saute of garlic, onion, green pepper, zucchini, portabella, and carrot with crushed tomatoes and red pepper flakes and a splash of wine. A total pantry supper that was hearty and warm last night, and again tonight.

I ended up doing Pad Kee Mao, or at least an approximation of it, because I shopped from a recipe at Epicurious.com but cooked from a Thai cookbook I have, but forgot to adjust the amount of meat.

MAN did the Epicurious shopping list have too much meat. After eating, I checked the cookbook recipe and it wanted a third of the amount of meat I actually put in. So at least I feel validated on the whole "Man, this recipe has too much meat" thing. Because that is not a sentiment I often have.

Also, the store did not have rice noodles, so it ended up with kind of an Italian-Thai fusion thing going on, since I substituted linguine.

The spices were pretty good, though, which was actually the part I was worried about. I rarely make any Thai dishes at all; I always feel like I'm flying blind with the high heat and the fast cooking and the omg scrambling for ingredients while the timer beeps at me. And it's nice to know that chopping up two serrano peppers, seeds and all, ended up with a medium-spicy dish. Now I feel like I have a decent calibration for future exploration.

Yeah, but watch out, because the peppers can vary widely on an individual basis.

Chez Pim's instructions for Pad Thai were a revelation... try it. I can now make better PT than the Thai joint down on the corner; not a high bar, perhaps, but folks are apparently willing to pay them for the hash they sling.
