Very important egg question Accidentally undercooked my hardboiled eggs, they are what I'd call "firm softboiled"[More:] and aren't runny in the middles but are not solid cooked yolks either. I discovered this by eating one but have already taken them off the stove, run under cool water and put them in the fridge.

Are they safe to store like that, considering they are not fully hard cooked? And for how long? I usually will make a few hardboiled eggs and then eat them over the course of 1-2 days. I can't do anything with them now until I get home tonight. Should I throw them away at that juncture? Thoughts?
I've kept eggs like this for a couple of days in the fridge (I do the same thing as you, Sass!) and am still here to tell you about it.

But then, I eat stuff off the ground, as well.

1 or 2 days? I wouldn't even give it a second though. If you're saying a week.... oof, no.
But I also don't eat anything a week old, even fully cooked (just because the thought of old leftovers wigs me out to no end)

Cooked -> cooled -> kept in fridge? you're fine.


disclaimer: ex "pro" chef giving this advice

now, having shot that out for credibility: if you knew what was going on inside of even the fanciest of restaurants where you pay *extra* for it, you wouldn't worry nearly as much as what you cook yourself.

Fine. And creamy and good, too, in a different way than harder cooked eggs (which I love).

I'd think they're fine to save for up to a week.

Another idea, though, is to shell them now and use the yolks to make a caesar- (or similar) type salad dressing. Partially cooked yolks are used this way for people who are squeamish about eating raw ones. And then you can make egg salad from the whites!
