SOUUUUUUP Yes!!!![More:]Crock pot is a go. Soup has been made and eaten. It was delicious. It had many ingredients, mostly vegetables and several varieties of bean. I also made some homemade bread. Outrageous. I am so full of soup I can't detail what was in it but I shall return later to do so.

SOOOOOOOOOOOOOOOOOOOOOOOUP.
Onion soup here tonight.

Damn I love soup. I just printed out 4 soup recipes from the Martha Stewart website - pasta & bean, french onion, tortellini (which I just made, with spinach) and hearty vegetable.

The french onion called for adding sugar to the onion to carmelize it, which makes sense, but I've never done it that way. Gonna try that one tomorrow.

Soup here tonight also. Chicken tortilla soup. Hubby is still not home; it's taken him 2 1/2 hours to drive home on this snowy night. I've got a big Irish whiskey waiting for him. Then, soup.

But back to soup. Mushroom barley is my favorite. Make some mushroom stock (simmer a bunch of mushrooms in a gallon of water for about an hour). Sautee chopped onion and a couple cups of diced mushrooms. When the liquid starts coming out of the mushrooms, add salt, pepper, 1-1/2 teaspoons of dried thyme, and a bay leaf. Add mushroom stock, bring to boil. When it boils, toss in a couple handfuls of barley. (Rinse it first.) Cook until barley is tender. Add chopped parsley at the end and cook until it doesn't taste so green anymore.

All of your soups sound good too. I'm going to have to make more while the cold weather lasts.

Mudpuppie - mushroom barley sounds awesome. Definitely want to make that. Could I do it in the crockpot or would the barley go all mushy?

My soup today: Beany Veg
- beans: chickpeas, turtle beans, split green peas, lentils
- vegetable stock
- vegetables: onions, carrots, celery, a potato
- spices: I kind of winged that. I think it ended up being bay leaves, rosemary, a smide of curry powder and one random cube of bouillion. Something else...oregano? parsley? whatever it was is was just a little smidge.

Soaked the beans overnight, ended up with wayyy too many beans but set some aside to cook on their own and freeze for later use. Tossed everything in the crock this morning, set it on low, came home tonight and it was all kinds of amazing.

I still have enough for lunch tomorrow and then another big serving (or two small ones) that I may have to freeze and save.

Sass -- I don't know if the barley would get mushy. You could stew it all day, then add the barley when you get home and let it cook for an hour. Report back!

Your soup sounds great.

We're having French onion soup for dinner tonight, no thanks to this thread.

I made some chicken noodle soup last night that was excellent. Just some chicken, chicken broth, carrot, onion, and egg noodles + poultry spices. I didn't have any celery which would have been great in it.

I did the chicken in the pressure cooker with the chicken broth and onion so the chicken was super tender.
