Improvising a Cream of Broccoli Soup Tonight Aside from a bit of thyme, what other herbs? Why?[More:] I have the rest under control. Thank you.
Garlic. Because it goes in everything.

Well, as usual, starting of with the Trinity. . .onions, garlic, celery simmered in some white wine.

Garlic is a staple, not a herb.

I was thinking of maybe some basil, but not sure.

Parsley, sage and rosemary, because then you could sing 'Scarborough Fair.'

sage. um. just because I always put it in my vegetable soups and it is yummy.

Things I like to put in cream of broccoli soup (not all at the same time, to be sure):

--lemon zest: to give a nice zing and cut the sometimes cloying quality of the cream;

--caraway seeds, smushed in a mortar&pestle: to impart a nutty quality that meshes well with the broccoli flavor;

--mustard seeds, ideally toasted in a little pan until they pop, and then smushed up in a mortar&pestle: for the same reasons as the lemon zest, but in different ways.
