I am enjoying a Dark 'n Stormy, made with home-made ginger beer. [More:]

A Dark' n Stormy, of course, is a measure of Black Seal Rum floated over ginger beer on ice.

The ginger beer is good, but it lacks some of the flavor nuance of the commercial stuff - Bundaberg, Reed's, etc.

For my second batch, I'm soliciting suggestions about how to add more spicy complexity to the brew. I'm thinking a vanilla bean, or maybe a dash of garam masala. What say ye, bunnies?

(oh, and cheers to the bun who initially passed along the ginger beer recipe - I've forgotten who it was, alas.)
I don't have any suggestions, but I'm not too proud to clamor for a tasting.

I'll send you some homegrown, organic jalapeņos if you think that's the ticket.

How weird that this was posted tonight! We were just at a bar having dinner and Dark & Stormy was listed on the drink special card & I'd never heard of it. Maybe the universe is trying to tell me something.........

I'd add more ginger, myself. Knowing me, I'd probably try to stick some chipotle powder in there, too. I'm not convinced that that's a good idea, but it's never stopped me in the past. :)

Peppers! I've got peppers. My brother, his wife & thier daughter were just visiting from Santa Fe. They brought me a gallon zip-lock bag of amazing roasted chiles. I've been trying to figure out what to do with them - pork chile verde is the current front-runner.

As for the ginger beer, I think I'll double the ginger next batch. Maybe I'll throw in some Galangal too..

Did you add the lemon juice? That would make a difference, too. Lime might be a nice addition as well.

Thanks for the link, Triode--I'd forgotten about that, and I have all the ingredients! Just looking at it, I'd say double the ginger for sure, and that may be enough. Of course, I haven't tasted it yet.

'Course it's been raining like mad for a week and I just noticed that my water tastes kinda funny (vaguely metallic, maybe a bit like the glass still had some soap in it, but it didn't) and is rather turbid. Think I'll wait 'til that's over.

Well, if you want to buy chipotle powder online, there are a few places to find it. We buy ours at the grocery store, in the "ethnic foods" section. I can pick some up for you this weekend when we go shopping, if you like.

Ye Old Dark & Stormy is the only mixed drink I've ever tried that I liked enough to remember. They're big out here with the maritime set - or so I've been told by a local authority and drinking partner.

Cannae help you with the mixing of said drink, alas. Only had one in my life.

Here's what I've been doing to drum a bit more oomph out of Fankhauser's ginger ale. The pounded ginger, the lemon zest, and the heat of the sugar syrup really do make a difference, but it's still ginger ale, ont a real brewed ginger beer with the kick and the depth I love.

I haven't tried making proper ginger beer yet, with the ginger beer plant or wort or whatever, though there are plenty of recipes out there.

(I did experiment with Fankhauser's method, using grape juice concentrate instead of ginger/sugar base to make fizzy grape "soda" ---- it's fruity, tangy, and a touch wine-y. I can't tell if I like it.)
