Las Vegas, beer, and....beer. A question! Do Las Vegas casinos -- particularly ones on the strip -- have a no-outside-alcohol policy?[More:]
I can't imagine that they do, right? I mean, they want you to be drunk, so if I design some sort of beer-carrying, self-cooled vessel to bring my own stock around, they shouldn't care. RIGHT?
I've never gotten any trouble for it. People often walk up and down the strip carrying drinks from casino to casino, and afaik they've never gotten any trouble for it.

Once, a few friends and I went to an all-night buffet with a flask of whiskey for our drinks. We tried to be discreet about it for awhile, but it was pretty obvious that no one cared all that much.

Seems to me when I was there, it was sort of like Bourbon Street -- drink it as you go, wherever that might be.

What kind of "vessel" are you contemplating? The beer isn't the problem; the "contraption that could be a bomb" most definitely "could be a problem".

Drinks are pretty cheap so I'm not seeing the point of your project. You buy the beer in the little places with the 49¢ Heinekin or stand next to a slot machine and get a free drink from the waitress. The plastic cups all look the same and no one would hassle you if you had a cup from one place in another place [or even a glass... you see them on garbage cans out on the street]. But a "beer-carrying, self-cooled vessel" might create suspicion in some places. And self cooling? If the beer has a chance to warm up you're drinking it too slow. Even in the summer.

Walking around outside with booze is totally legal on the strip. You can't drive with an open container anymore.

They do not have any such policy. Open sidewalk containers are perfectly legal in Las Vegas. I raised my plastic football in toast to a Vegas cop, who smiled back.

However, drunk and disorderly isn't tolerated, and the cops will crack down on that about as fast as you please.

Bringing booze *into* casinos is at the discretion of the casino. It's a long day from the time when Las Vegas was really a free zone, but in general I think the casinos *do* want you to come in, and *don't* want you distracting the other customers from their gambling. So if you don't make a big production out of it I'm sure you'll be fine. For my own part I toted my flask of Eagle Rare around, taking discreet nips, in at least a dozen different places and no one ever called me on it.
