Ginger Ale Recipe V2 Here's a recipe I've done a couple times. It makes a great ginger ale:

1.25 ounces fresh ginger root, grated
4 quarts H
2O
1/2 lemon cut into pieces
1 3/4C sugar
1/8 t teaspoon ale or champagne yeast (dissolved in 1/4C H
2O)
Grate the giner into a large pot, add 2quarts water, lemon and sugar. Simmer covered for 25 minutes. Remove from heat, still covered.
Put a little less than 1 qt cool water into each of two clean/sanitized 2L soda bottles. Strain the ginger liquid into each of the bottles through a funnel. Top up with cool water, leaving a few inches of head room.
Let cool to room temperature or slightly warmer. Add yeast to each bottle, cap tightly, shake like crazy and then let sit for a few days.
Notes: you can grate the ginger if you really want to, but it's way faster to smash it with the side of a chef's knife or a can of beans/soup/whatever then chop with a knife - it doesn't take much.
