Unless they have strictly dedicated cookware, i think you may be out of luck depending on how sensitive he is, but this one great chinese place i know would make things special and that may not be out of the question.
Things like lo mein (soft noodles) wouldn't have eggs, nor seafood dishes in whitish or brown sauces. Same with beef, pork, chicken or tofu as long as nothing is battered, the garlic or brown sauce or sezchuan...
Potstickers and different dumplings would be eggless.

Thanks so much for the yummy ideas ethylene. This place is great, but I just called and they have converted to strictly Japanese and Sushi. Bummer.

I will definitely keep the Lo Mein and Potstickers in mind for the future. Looks like we are having spaghetti tonight. :)

Ask the restaurant about dishes you can get; and, like eth said, beware that the breading (used for shrimp, chicken, etc.) may have egg in it.

There are noodles they can use that aren't egg based. Just like egg may be used in dumplings, even just to seal them, but they also may not. She said she would call, since with allergies you have to be so very careful.

i knew a guy who was allergic to all food. Seriously.
His body would become allergic to any food he ate more than once (so he couldn't eat it again if he'd just had it) so he had to be on some bizarre diet.
I'm not sure how it resolved itself as he could eat what he liked when i knew him, but this was actual not the worst of what he had to deal with.

My son can taste if something has eggs in it immediately. My sister gave him a piece of Laffy Taffy the other day, he put in the trash, and told us it had eggs in it. We read the the ingredients, sure enough it contained albumen. It's like Spidey Sense.

I found out last night that Spring Rolls are made with wrappers without eggs. I do have to be careful though. The allergy isn't life-threatening, he has stomach upset and vomiting. It seems like Chinese may not be an option unless I cook it at home.
