Chefs and foodies, help me! I need to make a meal, the leftovers from which I can pack as lunch. Grocery day is days away and my creative cooking skills are suddenly gone![More:]
Here's what I have:
-egg noodles
-ziti
-a cup or two of macaroni
-beans (dried, unfortunately unsoaked)
-a few potatoes
-a couple eggs
-an assload of brown rice
-one can broccoli and cheese soup
-frozen peas, corn and green beans
-frozen hamburger patties
-onions and garlic
-the usual condiments such as whole grain mustard, ketchup, relish, a tiny bit of bbq sauce and medium salsa, half a can of tomato paste, a half cup of diced tomatoes
-green olives, almond slivers, a cup of shredded cheddar
-the usual random spices - dried parsley, chives, paprika, cayenne, chili powder, dried basil etc etc
-olive and canola oil, margarine, rice milk

Please help me come up with something creative that I have not thought of? I usually throw together random casseroles, but my ability to throw together tasty things is way off lately.
you could make fried rice! I've never really made a casserole so I can't help ya out there but I think you do have the makings of one there. Maybe search Recipe Czar?

How about Shepherd's Pie? Deconstruct the hamburger patties into plain old ground hamburger and brown it up. Put the browned hamburger in the bottom of a casserole, then layer on some un-frozen peas, maybe some sweated onions, and other veggies if you want. Then, although it's not traditional, I would throw on a layer of that shredded cheddar. Top it off with some mashed potatoes and let the whole thing warm up in a 350 degree oven for about 15 minutes.

You're good to go, here:

Thaw 2 or 3 frozen hamburger patties.

Saute 1 small onion, chopped, and 3 or 4 cloves garlic, minced, in 2 Tablespoons olive oil in medium sauce pan, over medium heat.

Crumble thawed hamburger into sauce pan. Salt & pepper to taste, & brown the hamburger (4 to 6 minutes). Drain grease with a large spoon.

Add tomato paste & diced tomatoes, 1/4 cup frozen peas, and 1/4 cup sliced green olives.

Season with Italian seasonings (from your list, dried parsley & dried basil + any others you have that seem right). 1/8 to a 1/4 teaspoon each, depending on your preferences. I like to add a 1/2 teaspoon of brown sugar to my red sauces, if you have it, and a pinch of cinnamon, too.

Bonus points if you have any red wine to add to the sauce. If so, add 1/4 cup.

Simmer meat-sauce over medium-low heat for at least 10 minutes to let flavors blend, but not so long as to let the peas get mushy, stirring occasionally.

Cook ziti al dente, according to directions (7 to 10 minutes).

Drain pasta, then mix with meat-sauce.

Top with 1/2 cup shredded cheddar. Mix.

It's not exactly gourmet, but you probably won't have to force yourself to finish it.

I ended up getting distracted by the Simpsons and didn't get a chance to check back in on the thread, but coincidentally I made almost exactly what IRFH said, minus adding the hamburger patties.

For my lunches I made ziti with this sauce:
sauteed onion and garlic in olive oil, tossed in parsley, basil and red pepper flakes, chopped green olives, diced tomato and paste. Simmered that and then splashed in some balsamic vinegar and threw in a small amount of cheese, plus some donated parmesean from the roommate. Mixed that up and randomly tossed in some slivered almonds.

For my actual dinner I had green beans, a hamburger patty and a couple lonely pirogies I had in the freezer.
