What is Mirepoix, and where can I buy it? [More:]Or is it only something you can make? I'm gonna make some Wasabi Green Peas from this recipe if I can figure out what Mirepoix is! Help a sister out?
You don't buy it.

Mirepoix is onion, celery, carrot, chopped. That's it.

As bad as canned veggies often are, Veg-All is some seriously nasty shit. It's like the Dinty Moore Beef Stew of the canned vegetable world.

Living a bit farther away from the overflowing cornucopia of fresh produce and food that is California, I have gained an unexpected appreciation for the stability of canned fruits and veggies.

But, Christ, I don't know how people live like this. All the fresh produce here is all nappy, wilted, and dead looking. The produce sections in stores are like half the size of the ones I'm used to, and they all suck, even the upscale stores. Don't even get me started on the mushrooms.

Anyways. Veg-All. Eww. Yuck. Pasty, mealy, tasteless and colorless niblets of mush trying to pretend they were once vegetables.

I developed a taste for VegAll when I was a kid and I haven't ever been able to shake it. It's yummy in chicken pot pie, and I MUST try out the recipe for "chicken a la VegAll" that they have on their website.

Mirepoix – the carrot and onion mixture used for sauces and garnishes is thought to be named after the Duc de Lévis-Mirepoix, 18th-century marshal of France and one of Louis XV's ambassadors. Bit o' the trivia.
