The creamy tomatillo dressing from Cafe Rio.

I have a small but real anxiety at the thought of running out.
Now you know how I feel about ranch dressing.

FWIW, there's a recipe here that I intend to try out this weekend. Kalyn's recipes are pretty reliable, in my experience.

I've never heard of Cafe Rio and can't remember what tomatillos taste like. But the recipe's got a packet of Hidden Valley in it. This could be great. Printed!

I love me some Salsa Verde (though I have never dared work with fresh tomatillos, I buy the jar) and some Chipotle Ranch Dressing (which has nothing to do with the giant burrito chain - I was enjoying chipotle stuff before there was a Chipotle).

Anyway, I can imagine that being like the lovechild of those two wonderful condiments (but I wonder if using the Salsa Verde from the jar instead of prepping your own tomatillos would work... it is not very spicy)

There's a Cafe Rio in Oxnard (Winner of Worst City Name in California), straight down Highway 101 from me - 135 miles, plus two locations in L.A. in old neighborhoods of mine. Not enough to make me go back to L.A. anytime in the foreseeable future, though. I wonder if they deliver.
