Cream of Chicken Soup, the Update. [More:]

So I asked about recipes here, and got some great suggestions... but guess what happened? Before I could gather ingredients for any of those (planned for this week) I had a little accident. I was making a sort of mini-Briami with whatever various, lonely leftover vegetables were sitting around in the fridge, and after I had sauteed them all and added them to the roaster, I sauteed some garlic and grabbed a can of diced tomatoes to mix with that.

Except it wasn't a can of diced tomatoes, it was the can of Heinz Cream of Chicken Soup. I can be forgiven for this, because I never have cans of anything except tomato (canned stuff isn't very big here), plus the mostly red packaging, just like cans of tomato... I didn't even think twice, just opened it and dumped it in without thinking. And lo!

Here's where I'd like to say, "Wow! That turned out so good nomnom!" But no. What Jan said: Ah yes, we have that here. (It's gross, btw).

Ick. What a pointless waste of canning, packaging and ingredients. So, I still don't get to make the magical recipes that call for (obviously more tasty) cans of cream of chicken soup. This mess was faintly edible mixed with brown rice, but that's about it.

haha! The situation isn't that grim. I'm sure I could fashion my own version of cream of X soup, if I get that desperate. :)

Greece just isn't a multicultural place when it comes to food stuff, but I'm happy that (seasonal) fresh fruit and veggies are always available. I have a list as long as your arm made up of things I want (most of which I've whined about here), like chocolate chips, for example. I've never seen sour cream here. Limes are rare... I have no idea why. Ginger ale. Tons of pepper types that I would need to make real-ish Mexican food. Health food anything, for the most part.

I laughed about how many of the recipes in the other thread required water chestnuts - that's one thing I haven't quite come up with a proper substitute for. Seeded cucumber chunks, maybe? That's about as close as I've come, and it's not close at all.

If you have milk,butter, and flour you don't need cream of anything in a can. But I have to admit the convenience is nice.

Two suggestions: Jicama (which is probably as hard to find as water chestnuts are), or peeled broccoli stalks. Just don't cook them too much, or they won't be crunchy anymore.
